Have you ever heard of Jackfruit?  If not, let me fill you in.  It is a meatless alternative (it’s actually fruit) that closely resembles pulled pork.  It’s great for vegans, vegetarians, or anyone looking for a little variety.  I was skeptical at first but it’s quite good.  I like to buy canned jackfruit because it’s pre-sliced and easy to work with – all you have to do is cook it and shred it!

I want to share my recipe for BBQ Pulled Jackfruit Sandwiches.  It’s real deal shredded BBQ, loaded with BBQ flavor, but is a plant-based recipe.  It’s a little sweet and savory but looks and tastes like pulled pork.

Start by draining and rinsing the jackfruit.  Use forks or your hands to pull the jackfruit apart to resemble pulled pork.  I think a fork works well for finer shreds of meat and your hands work well if you want larger shreds of meat.

Heat oil in a large pan over medium heat.  Add the onion and garlic, and sauté until translucent.

Next, add the jackfruit, cumin, and paprika.  Cook this for about 5 minutes and season with salt and pepper.

Mix together the BBQ sauce, sriracha, and arrowroot powder in a small bowl.  Pour into the pan and stir to coat the jackfruit.  Continue to cook until heated through.

You can stop here if you want to enjoy the jackfruit while the sauce is a little runny.  I personally like the sauce to be slightly sticky, so I always bake the mixture before eating.

Preheat the oven and line a baking sheet with parchment paper.  Pour the mixture onto the baking sheet and spread out in a thin layer.  Then bake for about 7 minutes.

Remove from the over and stir.  Then bake for another 7 minutes until the sauce is thick and sticky.

Place the jackfruit on a bun, top with shredded lettuce, tomato, onion – any toppings of your choosing!

You could skip the bun and put the jackfruit on a salad, pizza, eat by itself because it’s that good…. the options are endless!  Trust me and give it a try!
