Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos!

All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc.  Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos!

Start by making the pancake mixture according to package instructions.  Heat a flat-bottomed skillet or griddle.  Once hot, add the pancake batter and cook the pancakes according to package instructions.  I made 6 large pancakes but make however many batches necessary to feed your family or guests.

If you are making multiple batches, I recommend preheating the oven to 200 degrees and placing the cooked pancakes on a baking sheet in the oven to stay warm while the rest of the pancakes are cooking.  You can always place the cooked pancakes on a plate and cover with aluminum foil as well!

Next, prepare the “taco filings”.  I used bacon and sausage links, but you could use Canadian bacon, peppers, onions…you name it!  Whatever combination of toppings or whatever items you consider to be breakfast foods work here.  You can really make this recipe your own and cater to the tastes of the people you are serving.

You’ll want to prepare the bacon or sausage according to package instructions.  Perhaps sauté the peppers and onions, if making those items.

I started with 6 large eggs, and that seemed to be plenty for the pancakes.  My rule of thumb was one egg per pancake (depending on how large your pancakes are).  I cracked the eggs in a bowl and whisked together.  Then I seasoned with salt and pepper and cooked in a large skillet over medium heat.  Perhaps next time I’ll add a little shredded cheddar cheese for slightly cheesy eggs 🙂

Finally, assemble the tacos.  Fold a pancake in half and hold it in your hand or use a taco stand to help the pancake keep its shape while you add toppings.  Place 1-2 pieces of bacon or sausage in the center.  You may need to break the bacon in half to fit inside the pancake.  Then top with eggs (or whatever other toppings you choose). Drizzle a little maple syrup on top and enjoy!

Repeat this step until all pancake breakfast tacos are assembled.  You can also setup an assembly line and have your family or guests assemble their own.  It’s a great breakfast-for-dinner option or brunch idea!  Make sure to serve with extra maple syrup for dipping.
