Valentine’s Day is a week away and I’m sure you’re busy making plans.  Whether you opt for a nice homemade meal or dinner at your favorite restaurant, you can’t skip dessert.  Calories don’t count on holidays, right?  Regardless of where we eat on Valentine’s Day, we always have dessert at home.  You can kick your feet up, snuggle up with your loved one, and gorge on delicious sweets 🙂

…and more!

We like to make a few desserts of our own as well as get a few desserts from the store to have throughout the week…. or so we tell ourselves as we devour the desserts in one night 🙂

This year, we will be making a Pink Squirrel Frozen Cocktail, Brownie Sundaes, and a Candy Charcuterie Board.

Pink Squirrel Frozen Cocktail is a delicious frozen ice cream drink that resembles a shake.  It’s pretty easy to whip up, only takes a few ingredients, and tastes amazing!

You add all the ingredients to a blender and blend until well combined.  Then you divide the cocktail between 2 glasses and enjoy.  Super easy!  I like to garnish with a little whipped cream and maraschino cherries.  It has a lovely almond and chocolate flavor.  **This is an adult beverage**

The recipe can be found here.

Brownie Sundaes are a classic dessert that everyone will enjoy.  I have a few brownie pans with different shapes, so I like to be a little festive with my brownies.  I make either brownie bowls or heart shaped brownies.  You just need a boxed brownie mix, some ice cream, and toppings, and you have a simple, yet yummy, dessert.  This is a great way to go if you have children or celebrate with friends – there is plenty to go around and everyone will enjoy assembling their own.

Bake the brownies according to package instructions.  Once cooled, add a heaping scoop of ice cream.  Then drizzle with syrup and add the toppings of your choice.  I like to use strawberry ice cream and strawberry syrup so I have the right color for Valentine’s Day, but you can use any flavor you like.  You can also make the brownies in a 9×13 pan and cut squares to use as the base for your sundae.  Be as original or creative as you like!

The recipe can be found here.

The Candy Charcuterie Board is my take on a traditional charcuterie board that features an assortment of meats, cheeses, nuts, etc.  The candy holds the same concept – a variety of finger food type items that can be served grab-and-go style.  Perfect to put out at a party or set out all week if you have a sweet tooth 🙂

Purchase a variety of candy and cookies – heart shaped everything!  Red and pink everything!

Sugar cookies, conversation hearts, gummy candy, chocolates, marshmallows, animal crackers, wafers, chocolate covered marshmallows, etc.  The list goes on!  Use a large serving platter or cutting board and arrange the candy in piles all over the platter.  You’ll create a beautiful snack with vibrant colors to celebrate Valentine’s Day.

No recipe needed, simply purchase the candy and cookies of your choosing and get creative!

I hope you enjoy Valentine’s Day and spend it with those you love, doing something you love!  Don’t forget the flowers 🙂

Happy Cooking!
