Instant Pot Buffalo Chicken Dip is the perfect recipe when you are looking for something quick and easy!  It’s cheesy, filled with tender chicken, has a bit of heat (hope you can handle it :)), and comes together in very little time.  It’s a great appetizer for game day or parties…or whenever you just need a little buffalo chicken kick!

Make sure the chicken is completely thawed and trim off any excess fat.  Place the chicken in the bottom of the Instant Pot.  Pour the hot sauce over the top.  I like to use Frank’s Xtra Red Hot Sauce for a little extra heat.  If you don’t want the added spice, use Frank’s Original Red Hot Sauce.

Close the lid and make sure the valve is in the “sealed” position.  Cook on high pressure for 15 minutes.  Let the pressure release naturally for about 5 minutes then quick release the rest of the pressure.

Remove the chicken and place on a cutting board.  Use forks to shred the chicken and set aside.  You can also shred the chicken right in the Instant Pot if you prefer.  I like to have extra room in the Instant Pot to make the sauce and add the chicken back in during a later step.  If you do shred the chicken in the Instant Pot, make sure to pour it in a bowl and set aside until the sauce is ready.

Set the Instant Pot to warm.  Add the cream cheese (make sure it is softened first), ranch dressing, and shredded cheese.  Stir to combine and let the Instant Pot melt the ingredients.  This should take about 5-7 minutes.  Once all ingredients are melted, add the chicken back into the bowl and continue to warm for about 5 minutes.  This will also help the chicken absorb some of the flavors.

Transfer the dip to a serving bowl.  Sprinkle some sliced green onions on the top.  You could also sprinkle some blue cheese crumbles on the top or have it available on the side.  Serve warm with tortilla chips or sliced baguette.  So good!

Store any leftovers in the fridge.  I’m not sure who has leftovers when it comes to buffalo chicken, but you never know 🙂
