Veggie French Bread Pizza is incredibly flavorful and the perfect weeknight meal, especially if you’re in a hurry!  It’s an alternative to traditional pizza and is completely customizable so you can tailor it to meet anyone’s taste preference.  It comes together in about 30 minutes or less.

I selected vegetables to use that I knew both Andrew and I would like but use whatever you have on hand or whatever is fresh in your garden.  It’s your creation so it’s up to you!

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.

Slice the French bread in half, horizontally.  If the bread is too long to fit on the baking sheet, slice the bread in half again so you have 4 shorter pieces instead of 2 long pieces.

I bought one long French bread, but I know you can sometimes purchase 2 shorter loaves.  Either option is fine, you just have to slice the bread accordingly.  You can also use half to make Veggie French Bread Pizza tonight and save the other half to make a different kind of French bread pizza another night.

Next, chop your veggies.  I like to do all the prep work at once so I can assemble the pizzas with ease.  I use red onion, bell pepper, tomato, and broccoli.  As previously mentioned, use any vegetables you like.

Place the bread on the prepared baking sheet (use 2 baking sheets if needed).  Spread marinara sauce evenly over each piece of bread.

Add ½ of the shredded cheese evenly between each piece of bread.

Add dollops of ricotta cheese to each piece of bread.

Then distribute the veggies between each piece of bread.  Some might have all the veggies, and some might have a few options – customize each piece!

I like to sprinkle garlic powder (or garlic salt if that is what you have on hand) on each piece as well.  It add a little extra flavor but is completely optional.  You could also use fresh minced garlic if you have that on hand.

Sprinkle the remaining shredded cheese over the top of each piece of bread.

Sprinkle dried basil over the top of each piece of bread.  You can skip this step and add fresh basil after the pizzas have baked, if you prefer.

Bake for 15-18 minutes or until the cheese has melted and the bread is crisp.  Remove from the oven, slice, and serve warm.  If you have any leftover marinara sauce that can be used for dipping as necessary.  Enjoy!
