Flavorful and creamy Instant Pot Garlic Chicken Pasta will make weeknight cooking a breeze!  It’s rich, without being too rich, easy to make, and delicious.  Plus, it’s a one-pot meal because it is entirely made in the Instant Pot.  That’s a win-win for dishes and cleanup if you ask me.

The chicken is simmered in a rich and creamy sauce that envelopes the tender pasta noodles.  Each bite is filled with wonderful flavor.  It’s like eating an alfredo sauce that doesn’t actually taste like alfredo.  This is a meal the whole family will enjoy!  You can jazz it up with some spinach leaves for added color or substitute the chicken for ground beef.  If you are looking for a vegetarian option, skip the meat and add mushrooms instead.

Start by adding salt, Italian seasoning, paprika, garlic powder, and black pepper to a large Ziploc bag.  Slice the chicken and add it to the Ziploc bag.  Seal the bag and shake it to coat the chicken.

Add olive oil to the Instant Pot and turn on the SAUTE setting.  Once hot, add the chicken and cook until cooked through, which should take about 5 minutes.  It’s OK if the chicken isn’t 100% cooked through but should be mostly done.  The chicken pieces are small enough that they will continue cooking while the Instant Pot is pressurized (in the next steps) and cooking the noodles.  Just make sure to check the chicken is done before eating anything!

Add the chopped onion and stir to combine.

Turn off the SAUTE setting and add a small amount of chicken broth to deglaze the bottom of the Instant Pot.  Sometimes Instant Pots have a hard time pressurizing if there is food stuck to the bottom of the bowl.  I like to use a rubber scraper to make sure the bottom of the bowl is clear before moving on.

Add the dried pasta and the rest of the chicken broth.  Stir to combine.

Close the lid and make sure the valve is in the “sealed” position.  Turn the Instant Pot on and cook on manual / high pressure for 5 minutes.  Quick release the steam when done – be careful to not burn yourself!

Remove the lid and stir in the butter, cream cheese, heavy cream, and parmesan cheese.  I find it easiest to cube the butter and cream cheese.  This helps it melt more quickly.  Stir to combine the ingredients.  You want the butter and cream cheese to be completely melted.  If it doesn’t appear they are melting on their own, you can turn the Instant Pot on to the SAUTE function for a few minutes to add a little extra heat to help move things along.  Just don’t forget to turn OFF the Instant Pot!

 

Serve the Garlic Chicken Pasta hot, right out of the Instant Pot.  Garnish with fresh chopped basil and enjoy!

Don’t forget a fresh baguette or some garlic bread to pair with your meal.  The sauce is great for dipping the bread in!  This recipe also holds up quite well if you have leftovers and need to reheat anything the next day for lunch.  Yum!
