BBQ Chicken Pizza Rolls are a spin on a classic pizza roll recipe.  Imagine a pizza but replace the traditional ingredients like pepperoni and sausage and with BBQ sauce and chicken.  Then imagine that same pizza in a bite sized form.  That is basically what a pizza roll is; all your favorite ingredients rolled up and nestled in fluffy dough.

The BBQ sauce replaces the marinara sauce in this dish and add the perfect amount of zest to each bite.  It pairs perfectly with the tender chicken, crisp bacon, and melted cheese.

Start by removing the pizza dough from the tube.  Place it in a well-oiled bowl and cover with plastic wrap.  You want the dough to come to room temperature and then rise for about 1 hour.  This makes the dough easier to work with, similar to homemade dough.  And since I’m on the topic, feel free to use your favorite homemade pizza dough recipe if you prefer.  I like the ease of store-bought dough for pizza rolls, but homemade dough would taste phenomenal in this recipe.

Preheat the oven to 400 degrees F.  Spray a 10-inch pie pan or oven-safe skillet with cooking spray.  Set aside.

Roll out the pizza dough on a clean surface.  Feel free to flour the surface beforehand.  Use your hand to stretch the dough or use a rolling pin to flatten the dough into an 18-10-inch rectangle.  Press together any tears or seams as you work.

Spread BBQ all over the dough, leaving about ½- inch border around the edges.  Use any brand or flavor of BBQ sauce you like.

Sprinkle 1 ¼ cups of shredded mozzarella evenly over the BBQ sauce.

Then, add the chicken, onion, and bacon in an even layer over the cheese.  You don’t want to use too many ingredients, or the dough will be hard to roll, and the inside won’t bake evenly so be a little sparse with your ingredients!  The first time I made this dish I went WAY overboard with my toppings!

I should also point out that I use rotisserie chicken.  It’s pre-cooked, requires little effort and is quite flavorful.  You can do the same or pre-cook your own chicken to use.

Starting on the long side (the 18-inch-long side), roll the dough away from you until you have one long roll.  Pinch the seams together.  Use a knife to add notches on top of the dough, measuring out 8-10 equal sized pieces.  Then, slice along the notches to create the pizza rolls.  Place in the prepared pie pan or oven-safe skillet.

Bake for 25-30 minutes or until golden brown and cooked through.

Remove from the oven and sprinkle the remaining ¼ cup of mozzarella cheese over the top.  Then return to the oven for a few minutes to melt the cheese.

I like to sprinkle fresh chopped parsley over the top before serving but chopped chives, green onion, or cilantro would also work well.

Serve warm with additional BBQ sauce on the side for dipping.  Enjoy!

Pizza rolls, pizza bites…or whatever you want to call them are a quick and easy meal that is sure to satisfy the whole family.  Let the kids help make the pizza rolls and add their own ingredients.  You could make half BBQ and half traditional pizza (just be careful when you are slicing the rolls so you keep the ingredients separate or you might get a mouthful of some interesting flavors!).  These would also make a great late-night snack at a sleepover or movie night.  I hope you give them a try!
