Last night we tried our hand at Vegan Vegetable Enchiladas.  The difference between these enchiladas and “traditional” enchiladas is the lack of meat and dairy.  We substituted both with vegan alternatives.  I’ll admit, the end result doesn’t look very pretty but it tasted amazing! These are packed full of vegetables and have incredible flavor.  We replaced ground beef with chopped mushrooms, added additional vegetables, and used a vegan cheese that tastes very similar to provolone.  If you did a blind taste test, I don’t think you would be able to tell the difference! Vegan Lasagna is a flavorful and hearty dish that’s packed with protein.  Yes, it is vegan but even meat lovers will enjoy it!  It’s layered with tender noodles, cashew ricotta cheese, marinara, spinach, and topped with mozzarella cheese. The recipe can be found here. The ricotta cheese is thick, creamy, and is a great recipe to use in lasagna, pasta, pizza, and more.  I was skeptical when making the ricotta because this was my first attempt, but it did not disappoint.  I didn’t know what to expect but was pleasantly surprised and admittedly didn’t know vegan cheese could taste this good!  It was also very easy to make and only requires a few ingredients, most of which are pantry staples if you lead a vegan lifestyle.  It has a lovely texture and amazing cheese flavor. It’s a great time of year to break out the grill and spend more time outdoors enjoying a meal.  Kabobs are a quick and easy meal to make and are very customizable; you can add any meat, vegetable, or seasoning of your choice.  We make kabobs more often than I want to admit because they are so simple! Today I want to share with you 2 recipes for vegetarian/vegan kabobs.  The first is Grilled Jackfruit & Vegetable Kabobs and the second is Grilled Vegetable Kabobs.  Both are packed with tender vegetables, are healthy for you, and incredibly tasty to eat.  Even if you aren’t vegetarian or vegan, you will enjoy these kabobs.  They also make a great side dish for any other grilled meal; pair a vegetable kabob with a juicy hamburger or chicken breast. Have you ever had a spring roll before?  If not, I’m sure you’ve noticed them on menus or seen pictures online.  They are sometimes called Vietnamese spring rolls or rice paper rolls and are similar to egg rolls but are unfried.  They are loaded with fresh vegetables and fruit and taste amazing!  They are also vegetarian/vegan and oh so healthy. The recipe I want to share with you today is for Vegetable Spring Rolls with Peanut Sauce.  These make a great lunch, dinner, or appetizer.  All you have to do is follow the instructions on the rice paper package…and maybe make a practice roll to familiarize yourself with the texture and feel of the rice paper 🙂  The taste is so light and refreshing! When most people think of cauliflower, they probably don’t get excited.  It’s just another vegetable with a bland flavor…blah blah blah…but it’s so much more!  It’s packed with fiber and B-vitamins, is incredibly versatile, and is one of my favorite vegetables to create meals with. You can create a full meal with one head of cauliflower.  Roast it, put it in soup, make pizza crust or rice, etc.  I however, like to make Chinese inspired dishes with cauliflower.  We did “Chinese Food Week” at our house and created some amazing meals!  You can’t tell the difference in the substitution of vegetable for meat, and the flavors were out of this world. Potato Tacos with Jalapeno Cilantro Sauce are a delight!  They are vegetarian as well as vegan, so they make the perfect meal for Meatless Monday (or any day of the week).  Plus, they are delicious!  And who doesn’t love tacos? The Jalapeno Cilantro Sauce is a wonderful condiment for these tacos.  It add a citrusy, tangy, flavor to the tacos.  You’ll have plenty of leftover sauce as well to enjoy later in the week on more tacos, rice, chicken, salad, etc. The recipe can be found here. Start by making the Jalapeno Cilantro Sauce.  Add all ingredients to a food processor or blender and blend on high until smooth; jalapeno, cilantro, garlic cloves, lime juice, apple cider vinegar, avocado oil, vegan mayo, and salt. Vegan Vegetable Noodle Soup is packed with fresh vegetables and is incredibly tasty and healthy.  It’s a spin on traditional chicken noodle soup but without the chicken.  Don’t let the word vegan scare you away.  Yes, this is a vegan dish, but it is also vegetarian, meatless, and delicious, so give it a try! If you are missing the chicken texture in each bite, add some chickpeas.  You can also mix and match the vegetables to your liking or to use up anything you have on hand. Greek Lemon Rice with Chickpeas is an amazing one-pot dish!  It is full of great Mediterranean flavors and is packed with so many herbs and veggies.  You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees.  Make sure you have a large ovenproof skillet to use.  You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use.  I used a large cast iron skillet, but a Dutch Oven would also work well. Fresh Vegetable Soup is vibrant, hearty, and full of fresh, wholesome flavors.  It’s perfect for lunches, cold winter nights, rainy nights, or anytime you are looking for a delicious homemade meal!  This soup will fill you up without the “heavy, too full” feeling. I like to use frozen corn because I think it tastes better than canned corn, but you can use either.  If you are using frozen corn, start by cooking the corn according to package instructions.  If you are using canned corn, drain and set aside. Next, chop the onion, carrot, tomato, bell peppers, and zucchini.  Peel and chop the potato.  Mince the garlic.  I like to do all my prep work before I start cooking so it doesn’t slow me down once ready to assemble! Fajita or Burrito Bowls are a super simple, healthy, and filling dinner that come together in little to no time!  I personally like how tasty and customizable they are.  You can make them ahead of time, double the recipe to have leftovers, add and any vegetables or toppings you choose. My version of a Fajita Veggie Bowl is incredibly easy to make!  You start by making a batch of rice, either white or brown, whichever you prefer. While the rice is cooking, slice a few bell peppers and a large onion.  I like to use 2 different colors of bell peppers and a white onion.  Heat oil in a large skillet over medium-high heat.  Add the peppers and onion and sauté until tender.
