Air Fryer Hot Pepper Lemon Skewers are a quick and easy weeknight meal with great chicken wing flavor.  Think tender, juicy chicken that falls off the skewer and a homemade sauce that’s tangy, zesty, a little spicy, and delicious.  They come together in less than 30 minutes and are something the whole family will love.  You will have requests to make these again and again.  Perfect for a weeknight meal, make ahead lunch to bring to work throughout the week, an appetizer, or shareable dish to bring to a potluck.  We like to enjoy the skewers as is, but they would pair well with rice, some steamed veggies, or perhaps a salad. The recipe can be found here. Start by soaking the skewers for at least 30 minutes to prevent the meat from sticking to the wood.  I try to soak my skewers before leaving for work in the AM … Continue reading

Sweet & Tangy Air Fryer Chicken Skewers make for a quick and easy meal.  They are a little sweet from the brown sugar and a little tangy from the cayenne and chili powder, but the combination just works!  Each skewer is packed with juicy, tender chicken that slides right off the skewer.  These are great for a weeknight meal after a busy day, can be served as a side dish or appetizer, and make a great lunch throughout the week.  Serve as is, over a bed of rice, with some cooked veggies or a salad on the side, and you have a complete meal! The recipe can be found here. Start by soaking the wooden skewer for at least 30 minutes.  This helps to prevent the meat from sticking to the skewer while cooking and it prevents the wood from burning.  I like to use 6-inch or 8-inch skewers (that’s what fits inside my air fryer). … Continue reading

I’m sure most of you reading this are familiar with Jalapeno Poppers, they are such a popular appetizer.  We recently made a batch for a party but made too much of the filling, so I saved it to use on a later date.  Coincidentally, the day I planned on using the leftover filling was cold and rainy, so I didn’t feel like grilling but thought, let’s try them in the air fryer and see how it goes. The end result?  Air Fryer Jalapeno Poppers that are filled with rich cream cheese, salty bacon, and plenty of melted cheese.  They taste similar to the grilled version but seemed to take a fraction of the time. The recipe can be found here. You want to start by removing the tops ONLY of the jalapenos.  Core out the inside and remove any seeds.  Then slice in half (lengthwise) and set aside. Combine the softened cream cheese, shredded cheddar cheese, paprika, garlic powder, cumin, … Continue reading

Air Fryer Lemon Pepper Chicken Skewers are bursting with fresh lemon flavor, have tons of juicy, tender chicken, are perfectly peppered (try saying that 5 times in a row), and slide right off the skewer.  They are a perfect weeknight meal, make ahead lunch, or appetizer.  Serve over a bed of rice, with some cooked veggies, or a salad and you have a delicious and healthy meal! Start by soaking the wooden skewer for at least 30 minutes.  This helps to prevent the meat from sticking to the skewer while cooking and it prevents the wood from burning.  I like to use 6-inch or 8-inch skewers (that’s what fits inside my air fryer). Cut the chicken into 2-inch pieces and place in a Ziploc bag.  Add salt, pepper, garlic, lemon zest, and olive oil.  Seal and toss to coat the chicken.  I like to use boneless skinless chicken breasts, but you … Continue reading

Air Fryer Garlic Parmesan Chicken Skewers are now part of my menu rotation!  They are packed full of juicy, tender chicken, basted in an amazing parmesan-garlic sauce (IYKYK), and slide right off the skewer.  Nothing is better than that.  These make a great appetizer or can be made into an easy weeknight meal when paired with some rice, cooked veggies, or perhaps a side salad. Cut the chicken into 2-inch pieces and place in a Ziploc bag.  Drizzle with olive oil and toss to coat.  I like to use boneless skinless chicken breasts, but you can substitute with chicken thighs if you prefer. Air Fryer Toasted Ravioli is my newest weeknight creation.  It’s delicious as an appetizer or can be served as a meal, is crispy, crunchy, perfectly seasoned, and has plenty of melted cheese.  What’s not to love?  I personally like the Air Fryer version because it’s not deep fried and coated in oil but still has great flavor.  Pair it with your favorite marinara or alfredo sauce for dipping and you are ready to dig in! This is a recipe you will need to cook in batches.  My Air Fryer only held 4-5 ravioli at a time, so I ended up doing 3 cooking cycles.  If you have a larger Air Fryer, you might be able to fit more ravioli at a time, but you will want to plan for cook time.  The recipe isn’t hard to make or incredibly time consuming to prepare but you will have down time as the Air Fryer cooks each batch.  So, pour a glass of … Continue reading

We don’t use our air fryer often but every now and again it’s fun to try a new recipe.  This time we tried an Air Fryer Blooming Onion.  A blooming onion is essentially a large onion that is sliced to resemble a flower, battered, deep fried, and served as an appetizer.  My recipe removes the deep-frying step and has you air fry it instead. The batter creates this lovely crust that is crispy, the onion is tender, and the dipping sauce adds a nice tang to each bite. The recipe can be found here. Start by preparing the onion.  Peel the onion and slice off the stem.  Do not remove the base on the other side of the onion – only remove the stem or end of one side.  Otherwise the onion will fall apart!   Turn the onion so the cut side is down.  Cut an inch from the … Continue reading

Air Fryer Vegetable Egg Rolls are incredibly delicious!  They are essentially baked, not fried, creating the perfect crispy and crunchy crust in every bite!  These are made in a fraction of the time and taste just like the Egg Rolls you would get at a restaurant.  Perfect for an appetizer, snack, or side dish! The recipe can be found here. I always start by prepping my ingredients, so they are ready to go when needed.  Slice the red bell pepper and green onions.  Then combine the cabbage slaw, green onion, red bell pepper, flaxseed, soy sauce, and red pepper flakes in a large bowl.  Make sure to mix well.  If you like heat, you can always add additional red pepper flakes. You can play around with the vegetables a bit, if there is something else you would like.  Perhaps you add some chopped mushrooms to the mixture or a few … Continue reading

Air Fryer Chicken Potstickers are super flavorful and surprisingly easy to make!  Plus, they are super versatile because you can fill them with anything you want.  Potstickers cooked the traditional way are amazing, but have you ever considered cooking them in an air fryer?  It’s a great way to get a crispy crust without too much added oil. The recipe can be found here. Start by combining the ground chicken, water chestnuts, green onion, minced onion, soy sauce, rice vinegar, garlic, and ginger in a bowl.  Stir until well combined or use your hands to combine (this is almost easier to blend everything together). Place 16 potsticker wrappers on the counter.  You can also use wonton wrappers if you don’t have potsticker wrappers, they will work just the same.  Add a scoop of the chicken mixture to the center of each potsticker.  You should have enough to add a small … Continue reading

We recently purchased an air fryer to see what the hype is all about – it’s pretty awesome!  Our first meal consisted of Air Fryer Lemon Pepper Chicken Wings and Air Fryer Homemade French Fries. Both the chicken wings and french fries were crispy on the outside and tender on the side.  Plus, they are so easy to make! You’d never guess you could have delicious chicken wings and french fries for a fraction of the oil traditionally used to cook these items.  That’s because air fryers require less oil than when frying food, making it a great appliance to use to cut calories and fat.  Generally speaking, air fryers product healthier alternatives to fried food.  Give it a try! Air Fryer Lemon Pepper Chicken Wings have great flavor in each bite!  The lemon flavor really stands out without being overpowering and the skin becomes crispy, creating a nice crunch.  … Continue reading
