Chicken Meatballs with Homemade Spinach Alfredo Sauce is a hearty and rich meal your whole family will love!  The homemade sauce is deliciously creamy and is paired with crispy, salty bacon, tender, cooked spinach, and flavorful chicken meatballs.  The chicken absorbs some of the sauce and flavors while simmering making them super moist.  It’s a savory dish you won’t want to miss out on trying! We recently went on a camping trip, and it was HOT.  Hotter than normal this time of year which was both pleasant and unfortunate.  Pleasant because it was nicer than cold, rainy days but unfortunate because we didn’t have AC 😊 The only way to beat the heat was to make homemade ice cream.  Yes, you read that correctly.  We made ice cream, from scratch, while camping.  And it’s actually quite easy. First, you need to purchase an Ice Cream Ball.  The one we have is YayLabs! Soft Shell Ice Cream Ball.  You can find it at your local sporting goods store or online by doing a simple Google search.  They are reasonably priced and very fun to use. Tuscan Chicken Alfredo tastes like a restaurant quality meal!  You won’t be able to get over how amazing the creamy sauce is and how each bite just the perfect amount of spice to it.  This dish is loaded with tender chicken, sun dried tomatoes, and a lovely garlic sauce. Not only does it taste amazing but it’s easy to make.  The chicken is marinated before cooking, the sauce whisks together in no time, and the veggies add a little texture to each bite.  You might even find yourself licking your plate clean!   The recipe can be found here. Looking for a quick and easy weeknight meal that tastes JUST like it came from a restaurant?  I have you covered!  I want to share my recipe for Instant Pot Chicken Fettuccini Alfredo that comes together in 30 minutes or less and is something the whole family will enjoy. The recipe can be found here. In the bowl of an Instant Pot, add chicken broth, heavy cream, lemon juice, garlic, salt, and pepper. Break the noodles in half and place in the Instant Pot.  Use a spoon to gently push down the noodles to cover with the liquid.  You don’t want to press too hard or you’ll break the noodles and you also don’t need to stir the ingredients at this point. National Pasta Day is today and what better way to celebrate than with homemade pasta!  If you haven’t had a cheat day yet this week, I highly recommend it be today 🙂 If you don’t mind putting in a little elbow grease and work, homemade pasta is the way to go.  If you’re on a time crunch or just not that interested in cooking, boxed noodles or a heat-and-serve pasta dish is just fine.  My preference is homemade pasta.  Yes, it can be time consuming, but the flavor is incredible, and it has a great texture! My go-to recipe is for Homemade Egg Noodles.  You do need a stand mixer and pasta attachment for this recipe to work.  You can also use this recipe with a hand cranked pasta maker, but I have yet to try that method. Any meal with pumpkin in it is the definition of fall.  Some are skeptical of pumpkin being a pasta sauce and I used to agree with them…until I tried it!  Let me tell you, it was delicious!  It’s a great mix of unusual flavors that actually complement each other very well.  The recipe I would like to share with you today is for Cheese Ravioli with Pumpkin Alfredo. The sauce is creamy and luscious, and a great autumn flavor as opposed to traditional Alfredo.  I chose to use cheese ravioli, but you could substitute any flavor of ravioli or even use tortellini in this dish.  You could also made homemade ravioli if you have the necessary tools, and time.  Otherwise, store-bought ravioli will work just fine.  (Not only can I cook but I can also rhyme 🙂 ) The recipe can be found here. If you’re anything like me, you love pumpkin spice!  I know, I know, a lot of people are over the pumpkin spice craze but with so many recipes to try how can you not be intrigued by its deliciousness?  I personally think it should be a year-round item and not just seasonal, but it’s not up to me.  To fulfill my need for pumpkin I decided to have ‘pumpkin weekend’ at our house to hopefully get it out of my system (between us, it will never be out of my system 😊). It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day!
