Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger.  You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy.  I like to top the burgers with arugula, but you could substitute lettuce.  I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The recipe can be found here. Start by cooking the bacon according to package instructions.  Transfer to a paper towel lined plate to drain the excess grease and set aside.  The recipe calls for 1 slice of bacon per burger, but you can make more and add as much as you like. In a small bowl, combine the mayonnaise, rosemary, and garlic.  Set aside.  If you are looking for a lighter option, use … Continue reading

These are addicting!  Who knew a chicken burger could taste so good?  Chicken Bacon Ranch Burgers are loaded with juicy chicken, melted cheddar cheese, crisp bacon, and plenty of ranch seasoning.  They are a new household favorite and something you should keep stocked in your freezer for plenty of summer grilling. The recipe can be found here. Start by cooking the bacon according to package instructions.  You can use any brand, thickness, or flavor of bacon you prefer.  Just make sure to have enough bacon to use as an ingredient inside the burgers and as a topping.  Once cooked, remove to a paper towel lined plate to drain the excess grease.  Chop 4 strips of bacon and set the other strips aside. Add the ground chicken, chopped bacon, 1 cup of shredded cheddar cheese, and the entire packet of ranch seasoning to a mixing bowl.  Don’t make the ranch dressing, just use … Continue reading

Quiche makes a great meal for breakfast, lunch, or dinner.  Quiches are easy to make in advance, refrigerates well, and reheats well (think yummy leftovers).  My recipe for Broccoli & Bacon Quiche with Pepper Jack Cheese is certain to be a crowd favorite.  It’s packed with tender broccoli, crispy, salty bacon, and spicy pepper jack cheese. The recipe can be found here. Start by letting the pie crust sit on the counter for 10-15 minutes to soften.  I like to use refrigerated pie crust for the simplicity of it, but you can use homemade if you prefer.  Once softened, unroll the pie crust and place in a 9-inch pie plate.  Crimp the edges and set aside. Preheat the oven to 350 degrees F. Microwave the broccoli according to package instructions.  Set aside to cool slightly.  I find it easiest to use “heat and serve” frozen broccoli.  If you prefer, you … Continue reading

A Pimento BLT Sandwich is not your ordinary, run of the mill sandwich.  It’s an elevated BLT because of the Pimento Cheese spread.  If you aren’t familiar with Pimento Cheese, it’s a creamy, cheese, and tangy spread that is often referred to as the pâté of the South.  It’s made with cream cheese, cheddar cheese, pimento peppers (which are sweet and mild), and mayonnaise.  You can adjust the spicy by adding cayenne pepper and other seasonings.  It’s best when homemade but you can usually find a jarred variety at your local grocery store.  It goes well with crackers, vegetables, or spread on a sandwich, which is what we are doing today. BLTs are crisp, fresh, flavorful, and can be a delicious sandwich on their own but I like to add a little something extra to mine.  I always think something is missing so I like to add avocado, egg, or in this case, Pimento Cheese.  It’s a BLTP … Continue reading

Puff Pastry Breakfast Pizzas are a quick breakfast or brunch idea that are easy to make and will be a fan favorite.  These aren’t your traditional pizzas with marinara sauce and pizza toppings.  They are completely made up of “breakfast food” items.  The crust is puff pastry so it’s incredibly light, flakey, and buttery.  You combine Havarti and parmesan cheese to get this creamy, melty, cheesy goodness in every bite.  I like to use maple bacon because I love the maple flavor and think it pairs well with the salty elements in this recipe, but you could substitute any flavor of bacon or even use Canadian bacon or sausage.  The eggs are cooked to your liking (whether you want a hard yolk or runny yolk).  I haven’t tried this recipe with scrambled eggs but I’m sure they would yield a similar result. This is going to be a breakfast meal you will love and want to make … Continue reading

Instant Pot Jalapeno Popper Shredded Chicken Sandwiches are a fun twist on a classic appetizer.  Think of your favorite jalapeno poppers, then think about what they would taste like when paired with shredded chicken…sounds good, right?  This is a comfort food recipe and it’s packed with flavor!  Plenty of tender, juicy chicken, a little heat from the jalapenos, a rich and creamy sauce, and crispy bacon make up this sandwich.  It’s a hearty and satisfying meal you’ll want to put into your weekly rotation. The recipe can be found here. Start by cooking the bacon according to package instructions.  Remove to a paper towel lined plate to cool, then chop and set aside. Next, slice the jalapenos and green onions, and set aside. Place the chicken in the bowl of the Instant Pot.  Add the chicken broth, jalapeno juice, chopped jalapenos (from jar), fresh sliced jalapenos, ranch seasoning, and black pepper. Bacon Jalapeno Crescent Roll Puffs is an easy appetizer or dinner recipe that will be a crowd favorite!  I say appetizer or dinner because the recipe is something most people would serve as an appetizer but if you eat enough of them (like we did) they can also be filling enough for an entire meal 😊 Think of this recipe as a spin on a traditional jalapeno popper.  You still have the jalapeno, bacon, shredded cheese, and cream cheese but instead of being stuffed inside the jalapenos, the ingredients are wrapped in crescent roll dough.  You get crispy bacon and spicy jalapeno, but the heat is cut by the combination of Colby jack and cream cheese.  The crescent roll dough creates this warm, soft, pillowy blanket to hold the ingredients together.  They are addictive! The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Cook the … Continue reading

Carbonara Baked Potatoes are something we tried recently, and I would definitely make again!  You are probably most familiar with Pasta Carbonara, but this is a spin on the traditional Italian dish.  Carbonara is essentially pancetta or bacon, with eggs, parmesan, salt, pepper, and maybe a little olive oil.  It’s comfort food at its finest and super yummy when paired with baked potatoes 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Wash and dry the potatoes.  Use a fork to pierce the potatoes on all sides (plus a few extra for good measure).  Rub each potato with a little olive oil and place on the baking sheet.  I also like to sprinkle mine with a little salt but it’s optional.  Bake for 1 hour or until tender (aka you can easily pierce the potato with a fork). While the potatoes bake, cook the bacon according to … Continue reading

Everyone loves a good Chicken Bacon Ranch Sandwich, but have you ever tried Chicken Bacon Ranch Sheet Pan Nachos?  Let me tell you…they are yummy!  Super easy to make, super quick to make, super easy to cleanup, and they work well as an appetizer (or as a meal for 2…guilty as charged).  The chicken is juicy and tender, the bacon is salty and crisp, and melted cheese brings it all (or holds it all) together.  My favorite part is the ranch dressing that’s drizzled over the top.  It’s not just a bottle of ranch dressing but a homemade mixture that is rich and creamy, and you will want some in every bite! The recipe can be found here. Start by making the ranch dressing.  Combine the ranch dressing mix, mayonnaise, sour cream, and milk in a mixing bowl.  Whisk until well combined.  Then cover and refrigerate until ready to use. I like to let mine sit for about an … Continue reading

We recently tried a recipe for Bacon Apple Chicken Burgers with Dijon Sauce, and it was amazing!  The burgers are a little sweet from the apples and a little salty from the crispy bacon.  Add the Dijon sauce and you have a little slice of heaven!  The Dijon sauce is a combination of Dijon mustard, mayonnaise, and maple syrup so it is sweet yet tangy, and I could not get enough of it.  All the flavors in this burger pair well and your taste buds will be happy 😊 The ingredient list looks long but these burgers really are easy to make.  And you will most likely have most of the ingredients at home already, so give them a try! The recipe can be found here. Start by preparing the Dijon sauce.  Add the Dijon mustard, mayonnaise, and maple syrup to a mixing bowl and stir to combine.  Give it a taste and adjust the ingredients, as necessary.  For … Continue reading
