I’ve been craving something light and refreshing lately and made a few bruschetta recipes this weekend to snack on.  And by snack on I mean we made it into a meal 😊 If you follow my blog, you’ve probably read my other posts about bruschetta – Simple Summer Bruschetta Recipes (May 2023) and Easy Bruschetta Recipes (June 2023).  It’s such a diverse food.  You can have sweet, savory, spicy, citrus, vegetarian, meat-based, or any combination.  And it’s a bite-sized food so you can serve it as an appetizer or side dish or do what we did and make it a meal.  I have 3 recipes to share with you today.  One is sweet and refreshing, one is savory, and one is citrusy and refreshing. I recently wrote a blog called Simple Summer Bruschetta Recipes and I’ve been craving something similar ever since.  I think bruschetta is the perfect summer appetizer because it’s easy to make, it’s a bite-sized snack, it’s customizable, and it tastes great!  One piece is never enough for me, so that’s why I like to prepare a variety and enjoy a smorgasbord of recipes 😊 Here are the recipes I have for you today: Roasted Tomato Bruschetta with Pesto Peach, Prosciutto, and Ricotta Bruschetta Cream Cheese, Avocado, and Dill Bruschetta   All are phenomenal in their own way.  The Roasted Tomato Bruschetta with Pesto has warm tomatoes that burst open while baking, and the sweetness really complements the pesto.  The Peach, Prosciutto, and Ricotta Bruschetta has juicy, ripe peach slices that pair well with the salty prosciutto.  The Cream Cheese, Avocado, and Dill Bruschetta reminds me of avocado toast and is something I would love to devour … Continue reading

We recently had dinner at a local Italian restaurant and ordered a variety of Bruschetta as an appetizer.  I’ve been thinking about the Bruschetta ever since and couldn’t resist the attempt to recreate it at home.  Who doesn’t love a crunchy Bruschetta appetizer?  And who doesn’t love options?  That’s what I have for you today!  Four vastly different yet incredibly satisfying Bruschetta recipes. Bring a taste of Italy into your kitchen with Chicken Alfredo Bruschetta Pizza!  It combines the delicious flavor of alfredo sauce with chicken, bruschetta, mozzarella cheese, and crispy crust.  You’ll love it! This recipe comes together in about 30 minutes, is packed with flavor, and is perfect for pizza night.  I even hear it makes great leftovers for lunch (or breakfast if you’re into that sort of thing) 😊 The recipe can be found here. Start by preheating the oven to 400 degrees F.  I like to line my baking sheet with parchment paper so it’s easier to transfer the pizza to slice when done baking but that is completely up to you. Bruschetta is a staple of summer meals.  I know it’s fall, and the days are getting colder, the sun is setting earlier, and you are probably thinking of warm, hearty meals…not fresh, summer sides.  BUT…bruschetta can be enjoyed in many ways.  Including being used as a pizza topping. If you have a vegetable garden in your backyard or perhaps like to visit your local Farmer’s Market, you can make bruschetta with some wonderfully fresh produce.  This time of year, you most likely have to purchase the ingredients at your local grocery store.  And that’s OK!  You’ll still have incredibly flavorful and fresh bruschetta to enjoy.  Now for this recipe, the bruschetta will be used as a pizza topping but you will have leftovers.  What to do with the leftovers you ask?  Add as a topping on a grilled chicken breast, serve as a salsa with tortilla chips, or serve with toasted baguette slices. Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal.  We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals.  Recently we made Instant Pot Chicken Bruschetta Pasta.  It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish.  The flavors pair well together and left us feeling quite satisfied! Every so often I like to make a vegan dish for a few reasons.  First, the food is actually delicious (don’t knock it ‘til you try it) and second, I have friends and family members who are vegan (or follow a similar diet), so I like to have a few recipes in my back pocket in case I’m ever entertaining them.  I’d rather be accommodating so they know they can comfortably eat at my house than have them eat before coming over.  And truly, the food is quite good, in addition to being good for you! Valentine’s Day is just around the corner and I’m feeling the love.  Our house is decorated with everything red and pink, I’ve picked out the perfect Valentine for my sweethearts (yes, I’m including the dog 😊), and we have a wonderful menu planned.  A lot of people like to go out to eat on Valentine’s Day and there is nothing wrong with that, but we usually opt to stay in and prepare a nice meal together.  It takes away from the rushed atmosphere you often feel at a restaurant on a busy day and allows you to really spend time together and do something fun together.  We both love to cook so it’s the perfect option for us!    The menu we prepared has a few new items, but everything is easy to make.  We’ll start with a Caprese Salad appetizer and use a heart-shaped cookie cutter to make the … Continue reading
