My new favorite slow cooker chili recipe is for Buffalo Chicken Chili.  It has the perfect amount of spice, a creamy base, tender chicken in every bite, and only take about 10 minutes to assemble.  Then…set it and forget it!  There is so much flavor packed into this recipe, you’re sure to like it! Start by adding the chicken to the base of the crock pot, then layer all other ingredients on top – beans, corn, tomatoes, chicken broth, Ranch dressing mix, buffalo wing sauce, onion powder, garlic powder, celery salt, dried cilantro, and salt. Stir to combine all ingredients.  Then place the brick of cream cheese on top. There is nothing like a juicy burger hot off the grill, chilled cocktail in hand, and warm weather to cure those winter blues.  I want to share some of my favorite chicken/turkey burger recipes with you now that it’s starting to feel like summer!  These are all a nice break from typical hamburgers and healthier for you (well, maybe not once you add all the toppings).  I think they are very flavorful, simple to make, and delicious to eat.  The first recipe I want to share is for Buffalo Chicken Burgers.  These are ¼ pound burgers that taste just like buffalo wings but without the mess.  Who wouldn’t want that?  I like to top my burger with extra buffalo sauce and a little ranch dressing, then add a small amount of each onto my plate for extra dipping sauce.  This burger would also pair well with blue cheese.  The recipe … Continue reading

We love all things Buffalo-flavored and this Buffalo Chicken Penne is no exception. The spices and Frank’s Red Hot Sauce add a rich flavor to the penne as well as the chicken. This is a simple recipe that packs a punch of flavor. Prepare the penne according to package instructions. Dice or cube the boneless chicken Combine the salt, pepper, garlic powder and paprika and toss to coat the chicken thoroughly, use a ziploc bag to toss the chicken and spices to do this easily. Heat 1 Tbsp. oil in skillet over medium high heat and thoroughly cook diced chicken. Then add 2 Tbsp. Frank’s Hot Sauce and cook for one minute. When chicken is cooked thoroughly, remove chicken from skillet. Add another tablespoon of oil to skillet; then add celery and cook for about 2 minutes. Then return chicken to the skillet. One of our favorite meals is Tacos, no matter what kind! We prefer soft shell tacos and  love to experiment with different fillings. Our favorite new filling is Buffalo Chicken using our favorite wing sauce Wing-Time. We think you will love this Buffalo Chicken Taco with Guacamole recipe. We really enjoy the chicken cubed rather than shredded in this recipe.  Dredging the chicken in the flour mixture makes the wing sauce adhere to the chicken cubes when you assemble the tacos. While many taco recipes have green onions, avocado, cilantro and peppers; we believe it is easier to just make our Chunky Guacamole recipe for the filling. Rather than sour cream we prefer to use Taco Fiesta Top the Tater, a sour cream dip that is seasoned perfectly for tacos. We are also crazy for Fish Tacos with Chunky Guacamole.
