Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout!  That’s right…. I said it.  Sometimes homemade meals are better than takeout.  These lettuce wraps are restaurant style and come together in about 20 minutes.  They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat!  Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces.  Then, season with salt and pepper and set aside.  An alternate option would be to substitute ground chicken or ground turkey if you prefer.  You obviously don’t need to slice either of those but should still season with salt and pepper.
