Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love!  It’s a filling and delicious pasta that comes together in about 30 minutes.  It’s rich, creamy, a little spicy, and packed with wonderful ingredients.  I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night.  I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner.  One thing I love to do is play around with recipes so even though my original plan didn’t work out, I was able to recover and still serve dinner.  Has that ever happened to you? The recipe can be found here. Start by seasoning both sides of the chicken tenders with Cajun seasoning.  I like to use tenders because … Continue reading

Slow Cooker Chicken Philly Cheesesteak Sandwiches are loaded with tender chicken, bell peppers, and onions, piled high on a hoagie roll and covered in melted cheese.  It’s a tasty meal that’s easy to make!  I think it’s perfect on a cold winter night or on a busy weekend because your slow cooker is doing most of the work. The recipe can be found here. Start by placing the chicken in a slow cooker.  I recommend using boneless skinless chicken breasts but if you prefer to use chicken thighs, make sure to trim some of the fat off first.  Sprinkle with salt, pepper, garlic powder, and paprika.  Season to taste.  I tend to add more garlic powder because we love the flavor. Pour the chicken broth over the top and cover.  Cook on LOW for 4-5 hours.  Add the bell peppers, onions, and mushrooms.  Cover and cook on LOW for an additional 1 ½ – 2 hours or until the … Continue reading

Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple.  It’s one of those meals you either love or hate.  If you hate it, you probably ate it too much as a kid 😊 but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf.  I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur.  If it’s available at a restaurant in some capacity, chances are I’ll order it.  I think it’s delicious and love the flavor combination. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a standard size loaf pan with parchment paper.  This will help you lift the meatloaf out of the pan after cooking, making it easier to slice and serve.  Open the jar of bacon bits and reserve ¼ cup. In a large mixing bowl, combine the ground chicken, breadcrumbs, dried minced … Continue reading

These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite!  They are all the flavors of a traditional Hawaiian pizza but without the crust.  Instead, the ingredients are piled on top of chicken tenders and baked to perfection.  The recipe is amazing!  The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Season each chicken tender with salt and pepper or garlic powder.  This step is optional, but I think it’s necessary to add flavor to the chicken.  You could also use an Italian blend. Wrap one piece of Canadian bacon around each chicken tender.  Place, seam side down, on the baking sheet.  You can … Continue reading

We were craving chili this week and decided to try making Chicken Jalapeno Popper Chili.  It’s incredibly flavorful without being too spicy.  It’s loaded with tender chicken, beans, salty bacon, and creamy/brothy goodness.  And it comes together so quickly!  No slow cooking all day or simmering on the stove.  You basically combine all ingredients in a large pot or Dutch oven, simmer for a short while, and dig in.  It’s perfect when you want a warm and hearty meal but don’t have a lot of time.  It also makes great leftovers to enjoy the next day or to freeze for a future meal. The recipe can be found here. Start by prepping your ingredients.  This makes cooking go much faster and you are prepared to add ingredients when the recipe calls for them.  Remove the rotisserie chicken from the bones and shred.  You should have about 4 cups of chicken, which is the perfect amount for this recipe.  Cook the bacon … Continue reading

Open Faced BBQ Chicken Sandwich are a great addition to any weekly menu!  Simple to prepare, hearty, and comforting on a cold night.  These open-faced sandwiches are very flavorful; crispy toast, melted cheese, BBQ rotisserie chicken that’s piled high, what’s not to love?  They are yummy and come together in about 20 minutes (including prep and cook time). The recipe can be found here. Start by removing the rotisserie chicken from the bone.  Shred it and set aside.  You will only need about ½ the rotisserie chicken for this recipe.  The recipe makes enough for 4 open-faced sandwiches.  If you need more than 4, adjust the ingredients accordingly.  Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Heat the oil in a large skillet over medium heat.  Add the onion and cook until soft and translucent.  Add the garlic and cook for about 30 seconds, until fragrant. Add the paprika and Worcestershire sauce.  Stir to combine.  Add the … Continue reading

Flautas are a traditional Mexican dish consisting of a tortilla that is filled with meat and cheese and tightly rolled before frying.  The recipe I want to share with you today is for Baked Chicken Jalapeno Popper Flautas, which is a combination of jalapeno poppers and chicken flautas.  They are made with shredded rotisserie chicken, cream cheese, shredded cheese, jalapeno, and tortillas.  This recipe is very easy to make, doesn’t take a lot of time, and makes the perfect appetizer or meal, depending on how many people you are serving.  We ate these for dinner and had 2-3 each so there was plenty to go around, and we had leftovers. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Line a baking sheet with parchment paper then generously spray with cooking spray. I like to use rotisserie chicken for this recipe, so I start by removing the chicken from … Continue reading

Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal!  It combines pan seared chicken with a cheesy, garlic filled bed of rice.  The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley.  It’s delicious and I hope you give it a try! The recipe can be found here. Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides.  I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Heat oil in a large skillet over medium heat.  Add the chicken and cook for 6-8 minutes (per side) or until cooked through and an internal temperature of 165 degrees F is reached.  Remove the chicken to a place and cover with aluminum foil to keep warm.  Set aside. Using the same skillet, melt … Continue reading

As colder weather sets in you are probably looking for something warm and filling to satisfy your cravings.  It is apple season (so move over pumpkin spice) and I think apple is one of the best flavors of the season because it pairs well with many dishes.  There are so many varieties of apples you are sure to find one that is your favorite and tastes great on a salad, or in a sandwich, or perhaps baked into a dessert. I like to create new recipes each fall that are themed around apples and have a few to share with you today: Slow Cooker Apple Cider Chicken & Apple Melts with Honey Mustard Gouda, Apple & Bacon Naan Flatbread Caramel Apple Cupcakes   Slow Cooker Apple Cider is completely homemade.  The base is water, you add chopped fruit and some mulling spices, turn on the slow cooker, and forget it overnight.  Your house will … Continue reading

Chicken Bacon Ranch Kabobs are a simple 5 ingredient meal the whole family will love!  They are very flavorful and a combination most people are already familiar with.  Try them for a quick weeknight meal or serve at a summer BBQ.  The kabobs are packed with crispy bacon, tender chicken, and are marinated in a homemade ranch dressing. The recipe can be found here. Start by adding the wooden skewers to a drinking glass filled with water to soak before grilling.  This will prevent the wood from catching fire on the grill.  Set aside until ready to use.  I like to marinate mine for at least a few hours.  Alternately, you can use metal skewers and skip the soaking process.  My preference is to use 6” skewers but 10” skewers also work, you just won’t have as many skewers. Add the olive oil, black pepper, and ranch seasoning to a gallon size Ziploc bag.  Shake slightly to combine. Slice … Continue reading
