Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients.  It’s filling, flavorful, and done in about 20 minutes.  This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top.  Add more or less to taste.  We like pesto at our house, so I tend to go a little pesto crazy 🙂 Add ½ cup of mozzarella cheese to each flatbread. Add ½ cup of cooked and diced chicken to each flatbread.  This is the perfect way to use up leftover rotisserie chicken. Bake for 10-12 minutes or until the cheese … Continue reading

These are addicting!  Who knew a chicken burger could taste so good?  Chicken Bacon Ranch Burgers are loaded with juicy chicken, melted cheddar cheese, crisp bacon, and plenty of ranch seasoning.  They are a new household favorite and something you should keep stocked in your freezer for plenty of summer grilling. The recipe can be found here. Start by cooking the bacon according to package instructions.  You can use any brand, thickness, or flavor of bacon you prefer.  Just make sure to have enough bacon to use as an ingredient inside the burgers and as a topping.  Once cooked, remove to a paper towel lined plate to drain the excess grease.  Chop 4 strips of bacon and set the other strips aside. Add the ground chicken, chopped bacon, 1 cup of shredded cheddar cheese, and the entire packet of ranch seasoning to a mixing bowl.  Don’t make the ranch dressing, just use … Continue reading

Summer is fast approaching and one thing I look forward to eating more of is salads.  There is something about a big bowl of leafy greens with all the fixings that screams summer.  It’s a healthy meal and is light and refreshing on a hot day.  You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. I want to share 4 of my favorite salad recipes with you: BLT Chicken Chopped Salad Grilled Chicken Arugula Salad with Strawberries & Feta Doritos Taco Salad Spinach Salad with Fruit & Maple Dressing   All are simple to make, delicious, and large enough to feed a family of 4.  If you leave the dressing off, you can portion out the ingredients to have lunches prepared for the week or dinner a couple night during the week (just add the dressing when you are ready to serve). … Continue reading

Slow cooker meals are great for any time of year.  Simply set it and forget it and you have a tasty meal that is hearty, filling, and will feed the whole family.  That’s what my recipe for Slow Cooker Shredded Thai Curry Chicken is…. simple but delicious.  The chicken is braised in a coconut-curry mixture and is moist and tender.  The coconut-curry is Thai style with a base of coconut milk, onions, peppers (spicy), sugar (sweet), fish sauce (tangy), and lime juice (citrus)…it’s like a flavor explosion in your mouth.  You then finish the dish with fresh herbs and serve it over a bed of rice. The recipe can be found here. Start by placing the chicken in the bowl of the slow cooker.  Top with the coconut milk, curry powder, fish sauce (or you can substitute soy sauce), lime juice, brown sugar, green onions, red onion, jalapeno, garlic, and ginger. Cover and cook on LOW … Continue reading

The ultimate handheld slider sandwiches are Herbed Chicken Parmesan Sliders.  They are made with ground chicken, not traditional breaded chicken, and are perfect for a crowd or when you want a lighter dinner.  Top with melted mozzarella cheese, fresh marinara sauce, and crisp basil, and you have the perfect slider!  I think the sliders taste best on toasted ciabatta rolls (who doesn’t love ciabatta?) but slider buns will also work just fine.  The ciabatta makes the sliders feel more authentic and Italian. The recipe can be found here. My first step is to bake the ciabatta rolls.  I buy bake and serve rolls, so I always get that out of the way before I prep any of the other ingredients.  Then I set them aside to cool while working on the rest of the recipe.  You can skip this step depending on the type of rolls you are using. Next, preheat the oven to 350 degrees F … Continue reading

Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing.  They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce.  It’s a burst of Mediterranean flavor!  For us, these are simple weeknight meal.  However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts.  They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping.  If a lettuce wrap isn’t your thing, swap out the lettuce for a tortilla. The recipe can be found here. Start by making the Tzatziki Sauce.  Add the Greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to a mixing bowl.  Stir to combine.  Taste and adjust the seasoning as necessary.  Cover and refrigerate until ready to use. I’ve found that … Continue reading

Everyone loves a good Chicken Bacon Ranch Sandwich, but have you ever tried Chicken Bacon Ranch Sheet Pan Nachos?  Let me tell you…they are yummy!  Super easy to make, super quick to make, super easy to cleanup, and they work well as an appetizer (or as a meal for 2…guilty as charged).  The chicken is juicy and tender, the bacon is salty and crisp, and melted cheese brings it all (or holds it all) together.  My favorite part is the ranch dressing that’s drizzled over the top.  It’s not just a bottle of ranch dressing but a homemade mixture that is rich and creamy, and you will want some in every bite! The recipe can be found here. Start by making the ranch dressing.  Combine the ranch dressing mix, mayonnaise, sour cream, and milk in a mixing bowl.  Whisk until well combined.  Then cover and refrigerate until ready to use. I like to let mine sit for about an … Continue reading

Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal.  We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals.  Recently we made Instant Pot Chicken Bruschetta Pasta.  It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish.  The flavors pair well together and left us feeling quite satisfied! The recipe can be found here. Start by preparing your ingredients – the ingredients you will be putting in the Instant Pot.  Slice the chicken, mince the garlic, etc.  Then, add the ingredients to the Instant Pot in the … Continue reading

Hawaiian Sheet Pan Chicken is a quick an easy, yet super tasty, weeknight meal.  The entire meal is made with one sheet pan so cleanup will also be quick.  You do need a cutting board, mixing bowl, and knife, but that’s still less dishes than normal, right?  I think it took me 60 min TOPS to make this dish, including prep time, bake time, and cleanup. This dish is full of flavor!  The chicken is moist and juicy, the veggies are tender, the BBQ sauce adds a little tanginess, and the pineapple add a wonderfully fresh, citrus flavor.  My favorite way to serve this is over a bed of rice but mashed potatoes or a salad would be a good substitute. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Slice the chicken and add to a mixing bowl.  Drizzle with olive … Continue reading

Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious.  It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon.  This is a great recipe for lunch or dinner. The recipe can be found here. Start by cooking the bacon according to package instructions.  If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred.  If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred.  You want the meat to be pre-cooked before assembling the dish. Preheat the oven to 375 degrees F. Spread the chicken in the bottom of a 9×13 baking dish.  Season with garlic powder, paprika, and pepper (optional). Whisk together the heavy cream, chicken stock, and cream cheese.  Spread … Continue reading
