Greek Chicken Wings with Lemon & Feta are the perfect combination for a light weeknight meal.  These crispy chicken wings have a wonderful lemony flavor and are inspired by Greek/Mediterranean cuisine.  They do need to be marinated so plan for timing, but you won’t regret your decision.  It’s a delicious recipe that can be enjoyed as an entrée, appetizer, or side dish. Baking with blocks of feta cheese recently became all the rage on TikTok.  I admittedly tried the Baked Feta Pasta recipe from a TikTok post, and it was phenomenal!  This blog, however, isn’t about pasta.  It’s about mashed potatoes.  Baked Feta Mashed Potatoes to be specific.  They are just as easy and effortless to make as the baked pasta and have a wonderfully creamy texture with a hint of tang from the feta cheese.  It’s the perfect recipe for a weeknight side dish (with leftovers to spare), to serve at a holiday dinner, or perhaps bring to a potluck.  It’s a foolproof recipe I’m sure you’ll love! Summer is fast approaching and one thing I look forward to eating more of is salads.  There is something about a big bowl of leafy greens with all the fixings that screams summer.  It’s a healthy meal and is light and refreshing on a hot day.  You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. Not too long ago, I hopped on the TikTok trend where you bake a block of feta cheese with cherry tomatoes and when done, toss it with cooked noodles for a light and refreshing pasta.  It was a HUGE hit in our house so I figured I would try it again but with a few changes.  The original recipe is for Baked Feta and Tomato Pasta but the recipe I’m going to share with you today is for Baked Feta and Vegetable Pasta. I can’t say that I’m super “with it” and on top of today’s trends but did come across a recent TikTok trend where people are baking an entire brick of feta cheese and turning it into pasta.  We tried it at home and not only is it a simple dish to prepare but it’s also delicious!  The result is Baked Feta and Tomato Pasta. The recipe can be found here. Start by preheating the oven to 400 degrees F. Add your tomatoes to a 9×13 baking dish.  Either cherry or grape tomatoes are fine but make sure you have 2 pints.  Then, liberally drizzle with olive oil and sprinkle with salt and pepper.  Stir until the tomatoes are fully coated. With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty!
