Cinco de Mayo is coming soon – it’s Friday, May 5th.  Cinco de Mayo quite literally means the 5th of May in Spanish so it’s easy to keep track of the date 😊 If you aren’t familiar, here are 3 fun facts about Cinco de Mayo, 1) it’s not Mexico’s Independence Day, 2) it’s not a national holiday in Mexico, 3) it celebrates Mexico’s victory against Imperial France.  As you can see, it’s a relatively minor holiday that is celebrated regionally in Mexico….and pretty much everywhere in the United States.  In Puebla, Mexico it is celebrated with parades, parties, music, folk dancing, and traditional foods.  In the United States, it’s celebrated with Mexican food.  Are you sensing a theme to my blog post?  I’m going to share fun Mexican fares to enjoy for Cinco de Mayo or anytime you are craving Mexican food. If you read my last blog, you know how much we love sandwiches (or sliders) at our house.  Another food we are obsessed with is chicken wings.  They are so easy to make and can be pair with tons of different sauces to create different flavor combinations.  I want to share with you 3 new chicken wing recipes that are inspired by Asian and Mexican dishes. This year, Cinco de Mayo falls on a Tuesday, which is also known as Taco Tuesday, so this is basically the best situation ever!  Maybe I’m stretching a bit, but it gives us something to look forward to and celebrate in light of being quarantined. How do you plan on celebrating?  We are going to enjoy a nice Mexican themed dinner with all the fixings!  Here is the menu: Spicy Homemade Tomato Salsa Salsa Verde Chicken Enchiladas Homemade Churros with Chocolate Dipping Sauce Frozen Pineapple Daiquiri   We’re going to enjoy a “Trio of Dip” with Guacamole, White Queso, and Spice Homemade Tomato Salsa.  This will be something to snack on while we cook and also to enjoy with our meal. How much Mexican food do I plan to eat this Cinco de Mayo, you ask? That’s nacho business! It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day! Memorial Day is to honor the men and women who died while serving in the U.S. Military. Many people celebrate Memorial Day in many different ways. Parades and picnics, barbeques with friends and family, going to the lake, Memorial Day weekend is the unofficial beginning of summer. Nothing brings family and friends together like food so some delicious crowd food and a little menu planning is a must so you can advise your guests what they should bring. Our tradition is to go to the lake for the holiday weekend and preparing as much of the food ahead of time as possible will make packing much more simple than hauling spices and cupboard staples you may not have at the cabin. For many of us Memorial Day marks the beginning of the “going to the lake” season with friends and family, this means lots of potluck dinners and picnics with food for a crowd. Burgers are often on these summer menus so we decided we should work on making the burger a little bolder with some spices, condiments and always with cheese! One of our favorite condiments is Sriracha so what better to have in and on top of a burger. The Sriracha Burger is full-flavored and fabulous. One of our favorite dishes is Guacamole so we thought it appropriate to combine with a burger for an all-star meal – the Guacamole Burger. Is there anyone who isn’t suffering from Cabin Fever after these long months of snow & cold? Hopefully the weather forecast is correct for the weekend – 70+ degrees by Sunday! The arrival of spring calls for a celebration with some great food and beverage, perhaps even a bonfire with s’mores! If your schedule is packed, perhaps you should have your groceries delivered! One thing for certain is that the grill is coming out this weekend. A Rib Eye Steak Topped with Blue Cheese Butter seems like a perfect way to kick off the grilling season.   No gathering should ever be without Guacamole (at least in our opinion) and we prefer the chunky kind.
