Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Souvlaki means “meat on a skewer”.  Pork is the most common type of meat used but chicken, beef, and lamb are other options.  The recipe I am going to share with you today uses chicken.  It’s packed with flavor and will bring a taste of Greece to your kitchen! Creamy Hummus Pasta with Sun Dried Tomatoes is something we tried recently.  We both like pasta and we both like hummus, so why not try them together, right? It’s savory, delicious, and light.  You’ll be satisfied without the heavy feeling of being too full.  The hummus replaces traditional pasta sauce, so you have a creamy and slightly nutty flavored sauce.  The sun dried tomatoes are roasted with garlic so they are tender and give off great flavor.  This recipe is a winner in our house! With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty!
