Chicken Parmesan Wings are a bite-sized version of the classic Italian dish.  The wings are breaded and baked and are perfectly juicy and tender.  They are then topped with marinara sauce and mozzarella cheese before serving.  They make a great appetizer or finger food to serve at a party.  For us, they make a wonderful dinner for 2.  I tend to serve the wings with additional marinara sauce on the side for dipping but a side of spaghetti noodles or some mashed potatoes would also pair well! The recipe can be found here. Start by preheating the oven to 425 degrees F and lining a baking sheet with parchment paper. Add the chicken wings to a large bowl (pat dry first if they are wet).  Add the flour and toss to evenly coat.  Then, season with salt.  I like to use about ½-1 Tsp of salt.  I don’t want the wings to be too salty and often the marinara … Continue reading

Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Eggplant Parmesan is a classic Italian dish with layers of breaded eggplant, tomato sauce, and mozzarella cheese, and is the perfect dish for Meatless Monday’s.  It’s delicious, healthy, and packed full of flavor.  Think hearty meal without the meat or a vegetarian version of Chicken Parmesan. The recipe can be found here. Start by preheating the oven and preparing a baking sheet with a wire rack.  The wire rack will help with air flow and circulation for even baking. Slice the eggplant(s) into ¼ inch slices. In a small bowl, whisk together eggs, melted butter, salt and pepper.  In another bowl, mix together breadcrumbs, Italian seasoning, salt, pepper, and Parmesan cheese. Bread the eggplant by dipping in the egg/butter mixture and then coating in the breadcrumb/Parmesan mixture. Place on the wire rack.  Repeat this step until you have enough eggplant to make 2 layers in a baking dish.  The size of the eggplant will vary.  If you … Continue reading
