I’m sure most of you reading this are familiar with Jalapeno Poppers, they are such a popular appetizer.  We recently made a batch for a party but made too much of the filling, so I saved it to use on a later date.  Coincidentally, the day I planned on using the leftover filling was cold and rainy, so I didn’t feel like grilling but thought, let’s try them in the air fryer and see how it goes. The end result?  Air Fryer Jalapeno Poppers that are filled with rich cream cheese, salty bacon, and plenty of melted cheese.  They taste similar to the grilled version but seemed to take a fraction of the time. We were craving chili this week and decided to try making Chicken Jalapeno Popper Chili.  It’s incredibly flavorful without being too spicy.  It’s loaded with tender chicken, beans, salty bacon, and creamy/brothy goodness.  And it comes together so quickly!  No slow cooking all day or simmering on the stove.  You basically combine all ingredients in a large pot or Dutch oven, simmer for a short while, and dig in.  It’s perfect when you want a warm and hearty meal but don’t have a lot of time.  It also makes great leftovers to enjoy the next day or to freeze for a future meal. Flautas are a traditional Mexican dish consisting of a tortilla that is filled with meat and cheese and tightly rolled before frying.  The recipe I want to share with you today is for Baked Chicken Jalapeno Popper Flautas, which is a combination of jalapeno poppers and chicken flautas.  They are made with shredded rotisserie chicken, cream cheese, shredded cheese, jalapeno, and tortillas.  This recipe is very easy to make, doesn’t take a lot of time, and makes the perfect appetizer or meal, depending on how many people you are serving.  We ate these for dinner and had 2-3 each so there was plenty to go around, and we had leftovers. Instant Pot Jalapeno Popper Shredded Chicken Sandwiches are a fun twist on a classic appetizer.  Think of your favorite jalapeno poppers, then think about what they would taste like when paired with shredded chicken…sounds good, right?  This is a comfort food recipe and it’s packed with flavor!  Plenty of tender, juicy chicken, a little heat from the jalapenos, a rich and creamy sauce, and crispy bacon make up this sandwich.  It’s a hearty and satisfying meal you’ll want to put into your weekly rotation. Bacon Jalapeno Crescent Roll Puffs is an easy appetizer or dinner recipe that will be a crowd favorite!  I say appetizer or dinner because the recipe is something most people would serve as an appetizer but if you eat enough of them (like we did) they can also be filling enough for an entire meal 😊 Think of this recipe as a spin on a traditional jalapeno popper.  You still have the jalapeno, bacon, shredded cheese, and cream cheese but instead of being stuffed inside the jalapenos, the ingredients are wrapped in crescent roll dough.  You get crispy bacon and spicy jalapeno, but the heat is cut by the combination of Colby jack and cream cheese.  The crescent roll dough creates this warm, soft, pillowy blanket to hold the ingredients together.  They are addictive! Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious.  It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon.  This is a great recipe for lunch or dinner. Start by cooking the bacon according to package instructions.  If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred.  If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred.  You want the meat to be pre-cooked before assembling the dish. If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. One of our favorite side dishes or appetizers to make over the summer is Jalapeno Poppers.  The filling so simple to make yet incredibly rich and flavorful so we thought why not try to use the filling in other recipes!  The result was Jalapeno Popper Stuffed Chicken. Let me tell you, it’s yummy!  You get tender, juicy chicken with spicy jalapeno and creamy cheese in every bite.  And it’s not that hard to make.  Let’s walk through the recipe.
