Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple.  It’s one of those meals you either love or hate.  If you hate it, you probably ate it too much as a kid 😊 but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf.  I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur.  If it’s available at a restaurant in some capacity, chances are I’ll order it.  I think it’s delicious and love the flavor combination. Chicken Parmesan is a classic dish and meatloaf is a family tradition shared by many so why not combine the 2?  The result is Stuffed Chicken Parmesan Meatloaf.  It’s a wonderful dish for a cold winter night or when you are looking for an elevated weeknight meal.  The chicken is tender and perfectly seasoned, it’s stuffed with lots of cheese, and served with marinara sauce to coat every bite. The recipe can be found here. Start by preheating the oven to 400 degrees F.  Line a loaf pan with parchment paper.  This will make removing the meatloaf from the pan easier once done baking. Add the ground chicken, ¼ cup marinara sauce, 4-5 minced garlic cloves, 2 Tbsp chopped parsley, Italian seasoning, onion powder, 2 Tsp salt, and black pepper to a mixing bowl.  Mix to combine then divide into 2 equal portions. Meatloaf is the epitome of comfort food.  And this time of year, we are all looking for something warm, hearty, and comforting to beat the cold temperatures.  What’s better than meatloaf?  Try Buffalo Chicken Meatloaf.  It has the traditional texture and shape of meatloaf but is made with ground chicken.  The hot sauce or buffalo sauce brings the heat, but it’s balanced by creamy blue cheese.  This is a dish that is perfect for a weeknight meal and makes great leftovers.  If you are buffalo sauce fan, I recommend you give it a try! Halloween is fast approaching. Halloween is one of our favorite holidays and we have gathered some of our favorite products for a Festive Fright Night gathering. Our Chef Ryan video for Halloween, The Feast of Fools has some ideas for some scary treats of Witches Fingers and Creepy Chocolate Spiders and an easy recipe for Sloppy (Spooky) Joes. One of our spooky appetizers sure to please is our BOOfalo Chicken Dip, the same great flavor as buffalo wings with a delicious cheese sauce.  Available for purchase in an ovenable tray,  all you have to do is heat and serve with your favorite tortilla chips.
