Taquitos are a fun hand-held treat that are crunchy and delicious.  You can customize the filling and change up the flavors to create different versions of the same dish and cook them in different ways.  They can be deep fried, baked in an oven or cooked in an air fryer.  I bet you could even use an Instant Pot, but I haven’t figured that recipe out yet 🙂 I’ve use Taquitos as both an appetizer and dinner.  They work well as an appetizer if you are hosting a party and want finger foods or if you plan to bring them to a potluck.  They are a quick grab-and-go item as you typically don’t need a plate or silverware.  Dinner is also an option if you want the Taquitos to be the main event. I think you can convert anything into Buffalo Chicken so that is the recipe I want to … Continue reading

Pizza is always on my mind.  I could eat it for every meal of the day, and sometime do.  I have no shame (wink).  I also love tacos but eat them far less frequently.  One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us.  Both are simple to make, offer a variety of flavor options, and can come together in no time.  Our compromise was to make a Taco Pizza and have the best of both worlds.  The end result was quite tasty!  I mean, as Homer Simpson always says, “Mmmmm…. Pizza”. The recipe can be found here. Start by preheating the oven to 375 degrees F.  Spray a baking sheet with cooking spray. Unroll 2 tubes of crescent rolls and lay them on the baking sheet, slightly overlapping each other to make them fit.  Pinch the … Continue reading

Last night we tried our hand at Vegan Vegetable Enchiladas.  The difference between these enchiladas and “traditional” enchiladas is the lack of meat and dairy.  We substituted both with vegan alternatives.  I’ll admit, the end result doesn’t look very pretty but it tasted amazing! These are packed full of vegetables and have incredible flavor.  We replaced ground beef with chopped mushrooms, added additional vegetables, and used a vegan cheese that tastes very similar to provolone.  If you did a blind taste test, I don’t think you would be able to tell the difference! The recipe can be found here. Start by preheating the oven to 350 degrees.  Spray a 9×13 baking dish with cooking spray.  Add about ½ cup of the enchilada sauce to the bottom of the pan and spread around.  I used canned enchilada sauce but feel free to use a homemade recipe if you have one. Next, … Continue reading

This year, Cinco de Mayo falls on a Tuesday, which is also known as Taco Tuesday, so this is basically the best situation ever!  Maybe I’m stretching a bit, but it gives us something to look forward to and celebrate in light of being quarantined. How do you plan on celebrating?  We are going to enjoy a nice Mexican themed dinner with all the fixings!  Here is the menu: Spicy Homemade Tomato Salsa Salsa Verde Chicken Enchiladas Homemade Churros with Chocolate Dipping Sauce Frozen Pineapple Daiquiri   We’re going to enjoy a “Trio of Dip” with Guacamole, White Queso, and Spice Homemade Tomato Salsa.  This will be something to snack on while we cook and also to enjoy with our meal. The guacamole and queso are both store-bought.  I do have a great recipe for Chunky Guacamole, which can be found here, and White Queso Dip, which can be found … Continue reading

Fajita or Burrito Bowls are a super simple, healthy, and filling dinner that come together in little to no time!  I personally like how tasty and customizable they are.  You can make them ahead of time, double the recipe to have leftovers, add and any vegetables or toppings you choose. My version of a Fajita Veggie Bowl is incredibly easy to make!  You start by making a batch of rice, either white or brown, whichever you prefer. While the rice is cooking, slice a few bell peppers and a large onion.  I like to use 2 different colors of bell peppers and a white onion.  Heat oil in a large skillet over medium-high heat.  Add the peppers and onion and sauté until tender. Add a packet of fajita seasoning to the skillet along with 1 cup of water.  Stir to combine and bring to a simmer to allow the liquid … Continue reading
