If you are looking for 5 layers of quesadilla goodness or a meal inspired by Tex-Mex flavors, I have just the thing!  It’s called Quesadilla Pie.  It’s a savory dish comprised of 5 layers of tortillas with all the fillings.  When I asked Andrew to describe it, he said “it’s good.  It’s really good”, then proceeded to keep eating so that was all I got out of him 😊 It’s easy to make and very mild to accommodate any palette.  I wouldn’t consider it a spicy dish, but you can customize it to spice it up or spice it down. Trash Can Nachos are a fun way to prepare and serve nachos.  The nachos are stacked in a cylinder-shaped metal container and baked until all ingredients are heated through or melted.  They are then inverted onto a serving platter and served in a stack.  Trash Can Nachos are easy to make, customizable, and delicious.  They were originally made famous by Guy Fieri and the Food Network. The recipe I want to share with you today is for Trash Can Chicken Nachos.  I will admit this recipe was trial and error for me.  I wasn’t sure how the nachos would bake, if they would hold their shape when removed from the can, etc.  And I didn’t really have a recipe to follow.  I simply used our favorite nacho toppings and hoped for the best!  The result was pretty amazing. Instant Pot Chicken Tortilla Soup is a wonderful meal that is made from scratch and is ready in a fraction of the time you would spend making this soup on the stove.  It’s hearty, spicy, and something the whole family will love.  You can even customize your toppings!  Add shredded cheese, cilantro, lemon wedges, tortilla chips – you name it! The recipe can be found here. Start by prepping your ingredients.  Mince the garlic, mince the onion, drain and rinse the black beans, drain the corn, slice the cilantro, and slice the lime.  Set everything aside and get your Instant Pot ready. Turn the Instant Pot on to the sauté setting and add the olive oil.  Once hot, add the onion and garlic.  It should start sizzling as soon as it hits the oil!  Sauté for 1-2 minutes or until translucent and fragrant.  Turn the Instant Pot off. Breakfast Enchiladas are a great way to start your day!  Enchiladas are tortillas that are filled with various ingredients, rolled up, covered with sauce, and baked to perfection.  For my Breakfast Enchiladas, I’m swapping a typical enchilada sauce for whisked eggs, and filling the inside with cheese and diced ham. These Breakfast Enchiladas can be customized to meet your taste preferences.  I used diced ham, but you could use bacon or sausage.  I used white onion, but you could substitute with bell peppers, mushrooms, spinach, etc.  Really make these your own and use the recipe below as a guide for quantities! If you need a fun new dinner idea, are looking for an appetizer for a party, or simply want to have Mexican night at home, Tostadas are the way to go!  They are very versatile yet simple and easy to make.  Tostada is the Spanish word for toasted, which fits the description perfectly, because a toasted (or deep fried) tortilla is the base of the dish.  You then top the tortilla with beans, cheese, meat, lettuce, fruit, and other toppings.  Basically, you want to pile the ingredients high and dig in…. these are meant to be messy! Sheet Pan Chicken Fajitas are a quick and easy meal that’s bursting with flavor!  The seasoning is a homemade mixture that has the perfect fajita flavor; a bit of spice but not overpowering.  The chicken and veggies are tender, and you can add any toppings of your choosing.  Even better, everything cooks on the same pan for easy cleanup! The recipe can be found here. Start by preheating the oven to 400 degrees F.  Line a baking sheet with parchment paper. Tex-Mex Chicken & Zucchini Skillet is a yummy, low-carb, one-pan dinner that’s ready in about 30 minutes, which makes it a great option for a quick weeknight meal.  It’s packed with a variety of vegetables, tender chicken, and lots of flavor! The recipe can be found here. This is how you make it: start by doing all your prep work.  Chop the onion, bell peppers, zucchini, green onion, and cilantro.  Mince the garlic.  Drain and rinse the black beans.  Slice the chicken breasts.  Set everything aside.  This will help you move along a lot faster while cooking because all ingredients are ready to go.  You can even portion out your seasonings ahead of time!
