Looking for a quick and easy weeknight meal that is also flavorful and delicious?  Look no further!  Meatless Monday has a new fan favorite…. Lentils & Vegetables in Peanut Sauce.  This is a vegan / vegetarian meal that’s packed with fresh vegetables and protein.  I chose some of my favorite veggies to use in this dish, but you can add any veggies you like.  You can add mushrooms, squash, snap peas, you name it! The peanut sauce is what really brings it all together.  It’s bursting with flavor and is rich and creamy.  I think it tasted great when coated on the veggies or when mixes with some white rice.  So good!  And this dish comes together in about 20 minutes. The recipe can be found here. Start by adding the peanut butter, ginger, garlic, soy sauce (or tamari), lime juice, lime zest, cilantro, sriracha, cayenne, salt, sugar, sesame oil, … Continue reading

Growing up I always loved a good peanut butter and jelly sandwich.  I mean, who didn’t?  It was a staple in my daily life and it’s making a comeback.  However, instead of sandwich form I’m pairing it with another food I love.  What for it……chicken wings.  Yes, peanut butter and jelly chicken wings.  A little louder for those in the back…PEANUT BUTTER AND JELLY CHICKEN WINGS! The recipe can be found here. These wings are A-M-A-Z-I-N-G and will satisfy any craving.  They are the perfect combination of sweet and spicy while being incredibly savory.  The chicken wings are coated in a delicious peanut sauce and the raspberry jelly dipping sauce brings it all together.  The combination of peanut butter, jelly, and chicken might sound weird, but I strongly suggest putting your hesitation aside and giving these wings a try! Start by preheating the oven to 425 degrees F and lining … Continue reading

Have you ever had a spring roll before?  If not, I’m sure you’ve noticed them on menus or seen pictures online.  They are sometimes called Vietnamese spring rolls or rice paper rolls and are similar to egg rolls but are unfried.  They are loaded with fresh vegetables and fruit and taste amazing!  They are also vegetarian/vegan and oh so healthy. The recipe I want to share with you today is for Vegetable Spring Rolls with Peanut Sauce.  These make a great lunch, dinner, or appetizer.  All you have to do is follow the instructions on the rice paper package…and maybe make a practice roll to familiarize yourself with the texture and feel of the rice paper 🙂  The taste is so light and refreshing! The recipe can be found here. The first thing you want to do is prep all your vegetables and fruit.  You will have a lot to … Continue reading

Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce.  They are perfectly sweet and tangy and make an easy dinner.  Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving! The recipe can be found here. Start by slicing the chicken breasts into strips and set aside. Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl.  Add the chicken to the marinade and toss to coat.  Cover with plastic wrap and place in the fridge for up to 2 hours. While the chicken in marinating, soak the skewers in water.  I like to add water to a drinking glass and place the skewers inside. You can also make the peanut sauce while waiting.  Add the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice to … Continue reading
