Burrata, Prosciutto, and Arugula Flatbread with Fig Jam is a wonderful recipe for any time of year.  It’s light, flavorful, and packed with fresh ingredients.  It’s so damn delicious!  The burrata is rich and creamy, and one ball is the perfect amount for the flatbread.  The prosciutto is nice and salty and adds a nice texture to each bite.  The arugula is a nice pizza topping because it adds fresh flavor and a bit of crunch to each bite.  You often see this combination in recipes (burrata, prosciutto, arugula) so you know this pizza will be good! The recipe can be found here. Start by preheating the oven to 375 degrees F.  Place the naan flatbread on a baking sheet and spread fig jam on each flatbread. A Thin Crust Potato Pizza with Thyme is my new favorite obsession.  I enjoyed a variation of this pizza at a local restaurant and have been wanting to recreate it at home ever since.  I must say, mine tastes just as good!  The base is a homemade pizza dough that is topped with shredded cheese, thinly sliced (almost paper thin) potatoes and onions, and fresh thyme.  It’s easy to make, flavorful, and delicious. I used my recipe for Thin Crust Pizza Dough for the crust.  If you have a different crust recipe you prefer, go ahead and use it, but this recipe is simple to prepare and doesn’t require any proofing so you can make this recipe on a whim and don’t have to worry about added time for the dough to rise.  Easy weeknight meal?  I think so. We recently went on a camping trip, and it was HOT.  Hotter than normal this time of year which was both pleasant and unfortunate.  Pleasant because it was nicer than cold, rainy days but unfortunate because we didn’t have AC 😊 The only way to beat the heat was to make homemade ice cream.  Yes, you read that correctly.  We made ice cream, from scratch, while camping.  And it’s actually quite easy. First, you need to purchase an Ice Cream Ball.  The one we have is YayLabs! Soft Shell Ice Cream Ball.  You can find it at your local sporting goods store or online by doing a simple Google search.  They are reasonably priced and very fun to use. Bring a taste of Italy into your kitchen with Chicken Alfredo Bruschetta Pizza!  It combines the delicious flavor of alfredo sauce with chicken, bruschetta, mozzarella cheese, and crispy crust.  You’ll love it! This recipe comes together in about 30 minutes, is packed with flavor, and is perfect for pizza night.  I even hear it makes great leftovers for lunch (or breakfast if you’re into that sort of thing) 😊 The recipe can be found here. These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite!  They are all the flavors of a traditional Hawaiian pizza but without the crust.  Instead, the ingredients are piled on top of chicken tenders and baked to perfection.  The recipe is amazing!  The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Season each chicken tender with salt and pepper or garlic powder.  This step is optional, but I think it’s necessary to add flavor to the chicken.  You could also use an Italian blend. My new favorite obsession (aka quick and easy weeknight meal) is Naan Flatbread.  You can create so many different variations by swapping out toppings and utilizing premade / store-bought naan flatbread.  My most recent creation is Walnut, Pear & Gouda Naan Flatbread.  It’s perfect for pizza night, to serve as an appetizer, or to serve alongside a salad or pasta dish.  Think fresh, juicy pears on top of warm, chewy flatbread with spicy arugula, walnuts, and a savory balsamic glaze.  It’s yummy! Place both flatbreads on the baking sheet and drizzle with 1 Tbsp olive oil (drizzle on both). Bruschetta is a staple of summer meals.  I know it’s fall, and the days are getting colder, the sun is setting earlier, and you are probably thinking of warm, hearty meals…not fresh, summer sides.  BUT…bruschetta can be enjoyed in many ways.  Including being used as a pizza topping. If you have a vegetable garden in your backyard or perhaps like to visit your local Farmer’s Market, you can make bruschetta with some wonderfully fresh produce.  This time of year, you most likely have to purchase the ingredients at your local grocery store.  And that’s OK!  You’ll still have incredibly flavorful and fresh bruschetta to enjoy.  Now for this recipe, the bruschetta will be used as a pizza topping but you will have leftovers.  What to do with the leftovers you ask?  Add as a topping on a grilled chicken breast, serve as a salsa with tortilla chips, or serve with toasted baguette slices. Apple Butter & Prosciutto Naan Flatbread is the perfect fall dinner.  It’s easy to assemble, quick to make, and tastes amazing!  The classic combination of apples and cheese give this recipe a sweet and savory taste, and very unique flavor.  It’s a great way to use up those apples or apple butter you bought during a visit to the orchard this fall 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each flatbread with ¼ cup of apple butter.  Add more to taste.  I like to use store-bought apple butter (from either a local apple orchard or grocery store) for convenience.  You can use homemade apple butter if you prefer. If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less. Start by preparing the bacon according to package instructions.  I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do).  Remove the bacon to a paper towel lined plate to drain the excess grease and cool.  Once cool, chop into pieces.
