When I think of crisp and refreshing, I think of caprese salad.  It has juicy, ripe tomatoes, slices of soft mozzarella, and is finished with incredibly fresh basil leaves.  If you add some French bread and a smear of pesto and can turn a lovely caprese salad into a tasty pizza.  It’s bursting with flavor and is to toasted to perfection. The recipe can be found here. Start by preheating the oven to 350 degrees F. Slice the French bread in half, horizontally.  If the bread is too long to fit on a baking sheet, slice the bread in half so it will fit.  Make sure you look for soft Italian bread or French bread.  You don’t want to use a hearty baguette or anything that will be too hard and crusty after baking. BBQ Chicken Pizza Rolls are a spin on a classic pizza roll recipe.  Imagine a pizza but replace the traditional ingredients like pepperoni and sausage and with BBQ sauce and chicken.  Then imagine that same pizza in a bite sized form.  That is basically what a pizza roll is; all your favorite ingredients rolled up and nestled in fluffy dough. The BBQ sauce replaces the marinara sauce in this dish and add the perfect amount of zest to each bite.  It pairs perfectly with the tender chicken, crisp bacon, and melted cheese. Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here. Who doesn’t love a good sandwich?  I’m always looking for new sandwich recipes, or slider recipes, in this case.  They make for a great tasty little bite, work well as appetizers, or can be packed for a light lunch.  My favorite thing to do is make a 9×13 pan of sandwiches that can be portioned out, wrapped in foil, and grabbed each morning on my way to work. If you are looking for a quick and easy weeknight meal that is customizable to individual tastes and will get you outdoors and grilling so you can enjoy the beautiful weather while you cook, I have just the thing!  Grilled Naan Flatbread is the answer to your prayers.  We’ve made this meal multiple times over the past few weeks because it’s so easy! When I say recipe, I really mean grilling instructions.  You don’t need much of a recipe for the flatbreads because it’s just assembly – pick and choose your own toppings.  It’s essentially pizza, and you can’t go wrong with pizza, so add the toppings you like! Pizza is always on my mind.  I could eat it for every meal of the day, and sometime do.  I have no shame (wink).  I also love tacos but eat them far less frequently.  One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us.  Both are simple to make, offer a variety of flavor options, and can come together in no time.  Our compromise was to make a Taco Pizza and have the best of both worlds.  The end result was quite tasty!  I mean, as Homer Simpson always says, “Mmmmm…. Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Veggie French Bread Pizza is incredibly flavorful and the perfect weeknight meal, especially if you’re in a hurry!  It’s an alternative to traditional pizza and is completely customizable so you can tailor it to meet anyone’s taste preference.  It comes together in about 30 minutes or less. I selected vegetables to use that I knew both Andrew and I would like but use whatever you have on hand or whatever is fresh in your garden.  It’s your creation so it’s up to you! The MN State Fair is cancelled.  Those are words I never thought would come out of my mouth, but it’s 2020, and anything is possible this year 🙂  And what a year it’s been!  Luckily, some food trucks and vendors are still able to sell their highly demanded food at various locations around town.  If you have ventured out and waited in line for any of your favorites – good for you!  If you have not, there’s still time.  OR…. drum roll, please…. you can enjoy fair food in the comfort of your own home.
