Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients.  It’s filling, flavorful, and done in about 20 minutes.  This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top.  Add more or less to taste.  We like pesto at our house, so I tend to go a little pesto crazy 🙂 Add ½ cup of mozzarella cheese to each flatbread. Do you remember those yummy ice cream pizzas you probably had as a child at Dairy Queen?  They came in multiple favors and were typically served at a party.  They were my FAVORITE!  And there was a time in my life that I believe they were discontinued, and I was admittedly bummed to never have one again.  However, I was able to find a way to recreate them as copycat versions of the original. A previous blog of mine for White BBQ Sauce Grilled Chicken discusses a wonderful condiment – White BBQ Sauce.  Another recipe I created using the same BBQ sauce is for a White BBQ Sauce Grilled Chicken Flatbread.  It’s absolutely divine!  The White BBQ Sauce is tangy, zesty, and pairs well with grilled meat…or in this case, acts as a great pizza sauce 🙂 This flatbread recipe is simple to make and can be customized to any taste.  I like to use chicken, cheese, red onion, and green onion.  You can omit or add any items.  Try adding mushrooms or green pepper, chopped bacon, you name it!  Or skip any item if you have a pickier eater on your hands 🙂 The recipe for the White BBQ Sauce can be found here. Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese.  It’s the ultimate mash-up meal!  And it’s something the kids will absolutely love!  Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread.  Dip it in your favorite marinara sauce before each bite and you will be in heaven. The sandwiches are somewhat customizable too.  Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich. Start by adding 3 Tbsp unsalted butter to a microwave safe bowl.  Microwave for 30 seconds or until melted.  Add the parsley, Italian seasoning, garlic powder, and salt.  Stir to combine and set aside.  If you prefer to use salted butter, simply skip adding any additional salt. Puff Pastry Breakfast Pizzas are a quick breakfast or brunch idea that are easy to make and will be a fan favorite.  These aren’t your traditional pizzas with marinara sauce and pizza toppings.  They are completely made up of “breakfast food” items.  The crust is puff pastry so it’s incredibly light, flakey, and buttery.  You combine Havarti and parmesan cheese to get this creamy, melty, cheesy goodness in every bite.  I like to use maple bacon because I love the maple flavor and think it pairs well with the salty elements in this recipe, but you could substitute any flavor of bacon or even use Canadian bacon or sausage.  The eggs are cooked to your liking (whether you want a hard yolk or runny yolk).  I haven’t tried this recipe with scrambled eggs but I’m sure they would yield a similar result. There is nothing better than deep-dish pizza, especially when it’s homemade!  I love the fresh marinara sauce, fresh herbs, mounds of melted cheese, soft dough, and plethora of toppings.  It’s one of those meals you crave because you probably only have it 1-2 times each year and it’s most likely when you’re traveling to a city known for deep-dish pizza…  Well, you’re in luck!  I want to share my recipe for Homemade Cast-Iron Deep-Dish Pizza with you. Gruyere & Onion Flatbread is a wonderful recipe for a quick weeknight meal.  It’s light and will leave you feeling satisfied without being overly full, and it has great flavor!  It’s a little salty but has this rich and nutty flavor from the gruyere cheese and a hint of tang from the red onion.  The Lavash flatbread makes the perfect pizza crust.  If you aren’t familiar with Lavash, it’s a flatbread that is low in sodium, low in cholesterol, and is very thin (less doughy).  I think Lavash is perfect because it is paper thin and get a nice, crispy bottom, so each bite is crunchy. Pesto & Tomato Flatbread is a yummy recipe when you are in need of a quick meal.  It’s light and will leave you feeling satisfied without being overly full, and it has great flavor!  The Lavash bread is crispy, the pesto has a lovely, fresh taste, the mozzarella cheese is melted and pairs well with the pesto, and the tomatoes are tender and roasted.  It’s delicious!  Plus, if you’re anything like me, you probably have most of the ingredients at home already so it’s easy to whip up in a bind or when you don’t have other dinner ideas 😊 I like to use store-bought pesto for the convenience, but you can use homemade if you prefer.  If you aren’t familiar with Lavash, it’s a flatbread that is low in sodium, low in cholesterol, and is very thin, so it’s less doughy.  It’s great when you are looking for a paper-thin, crispy crust or are looking to cut some … Continue reading

Pizza for breakfast?  Yes please!  I could, without a doubt, eat pizza for breakfast every day.  I know there is conflicting information out there…is pizza a breakfast food?  Do you eat it hot or cold?  And so on.  This recipe, however, is specifically for BREAKFAST pizza, so you can’t go wrong! The recipe can be found here. The crust is made of hash browns, not a traditional pizza crust.  It gives it a nice crunch while also including a favorite breakfast item in the recipe.  The top is loaded with eggs, cheese, and the veggies of your choice.  You can bake the eggs to meet your taste; bake a little longer for no runny yolk or bake a little less for a runny yolk.  Don’t like bell peppers but love mushrooms?  Skip the peppers and use mushrooms.  Get the idea?  The recipe does list specific ingredients, but you can substitute to meet your needs.
