We were watching a cooking show recently where they made Sheet Pan Quesadillas.  They not only looked amazing but seemed very simple to make so we thought, let’s grab some of our favorite ingredients, play around with different seasonings, and give it a try!  The result is Sheet Pan Chicken Quesadillas. These are fabulous!  You get tender chicken and loads of beans and veggies in each bite, it’s perfectly seasoned, and has plenty of melted cheese.  We use onion, bell pepper, black beans, and corn for our recipe but you can easily customize the “filling” to your liking.  Add mushrooms, green onion, etc.  Substitute the chicken breast for ground beef or pulled pork, etc.  You can really make this meal your own and cater to individual tastes.  I mean, you do have an entire sheet pan of quesadillas, so go ahead and make one side to your liking and the other side to your kids liking. If you are looking for a quick and easy breakfast option I have just the thing – Ham and Cheese Breakfast Quesadillas.  These are all the rage at my house!  They come together in a matter of minutes, can be customized, are portable if you need to eat on the run, and are big enough to share (if you want 😊). My favorite ingredients to use are scrambled eggs, ham, and cheese.  Very simple but very tasty.  You can substitute the ham for breakfast sausage or add veggies like mushrooms, spinach, onions, peppers, etc.  Make it your own!  One thing I want to point out is that the meat needs to be pre-cooked.  You will not be cooking or heating the quesadilla enough to fully cook the meat through.  Sliced deli ham works great because it’s thin and can be used as is or chopped into small pieces.  Pre-cooked breakfast sausage (I’m partial to the crumbles) also works well.  If you … Continue reading

Since it seems we will be spending Saturday in the house thanks to snow, rain, and wind and whatever else Mother Nature throws at us, why not do some cooking and snuggle in to watch the Kentucky Derby and some flicks. Time to think about what that menu should look like! We do so many recipes with Buffalo flavor we went searching trends and experimenting for a new take on wings and determined that Jerk Seasoned Wings were the winning flavor. This recipe has the wings marinate in a lovely spicy sauce that infuses some wonderful flavors into the wings. This Jerk Chicken Wing recipe is for 3 lbs. but you may want to double the recipe because these chicken wings are addicting!
