Cinco de Mayo is coming soon – it’s Friday, May 5th.  Cinco de Mayo quite literally means the 5th of May in Spanish so it’s easy to keep track of the date 😊 If you aren’t familiar, here are 3 fun facts about Cinco de Mayo, 1) it’s not Mexico’s Independence Day, 2) it’s not a national holiday in Mexico, 3) it celebrates Mexico’s victory against Imperial France.  As you can see, it’s a relatively minor holiday that is celebrated regionally in Mexico….and pretty much everywhere in the United States.  In Puebla, Mexico it is celebrated with parades, parties, music, folk dancing, and traditional foods.  In the United States, it’s celebrated with Mexican food.  Are you sensing a theme to my blog post?  I’m going to share fun Mexican fares to enjoy for Cinco de Mayo or anytime you are craving Mexican food. We made Taco Rice with Queso earlier this week and it’s probably one of my favorite new recipes we’ve tried lately!  It’s a one-pan recipe with meat, taco seasoning, and rice that is coated in warm, melted queso.  Talk about delicious!  The rice is perfectly seasoned and tender, and pairs well with the meat, but my favorite part is the queso.  You drizzle some over the top of the dish before serving and then add more and more and more until you have the appropriate amount (aka a lot) of queso on your plate. Don’t mistake this recipe for a burrito bowl.  You don’t add lettuce, tomatoes, shredded cheese, salsa, etc. on top (but you sure can!).  You simply enjoy a bowl of taco meat, rice, and queso.  And it’s amazing. Spicy Grilled Queso is the perfect appetizer or side dish for your next party!  It’s SO SIMPLE to make…you cook the meat, add all ingredients to a disposable pan, heat on the grill, and serve.  It could not be simpler to make or more delicious to eat 😊 It has a slightly smokey taste from the BBQ, a hint of heat from the jalapenos (don’t worry, it’s not overpowering), and plenty of melted cheese for dipping. The recipe can be found here. Start by preheating the grill to 250-300 degrees F. While the grill preheats, prepare the ingredients.  Heat a large skillet over medium heat.  Add the pound of meat and cook until cooked through, crumbling as it cooks.  Then remove from the heat and set aside. This year, Cinco de Mayo falls on a Tuesday, which is also known as Taco Tuesday, so this is basically the best situation ever!  Maybe I’m stretching a bit, but it gives us something to look forward to and celebrate in light of being quarantined. How do you plan on celebrating?  We are going to enjoy a nice Mexican themed dinner with all the fixings!  Here is the menu: Spicy Homemade Tomato Salsa Salsa Verde Chicken Enchiladas Homemade Churros with Chocolate Dipping Sauce Frozen Pineapple Daiquiri   We’re going to enjoy a “Trio of Dip” with Guacamole, White Queso, and Spice Homemade Tomato Salsa.  This will be something to snack on while we cook and also to enjoy with our meal. Mexican Chicken and Rice is incredible!  It has the best mesquite BBQ flavor, which is slightly sweet and smoky, and it pairs perfectly with Instant Pot Mexican Rice.  Both the chicken and rice are pretty simple to assemble so this is a great go-to meal for any day of the week! The Mexican Chicken recipe can be found here. The Instant Pot Mexican Rice recipe can be found here. Start by placing the (thawed) boneless skinless chicken breasts in a large Ziploc bag.  Then pour the entire bottle of Lowry’s marinade into the bag and toss to coat.  Make sure the bag is completely seals and place in the fridge to marinate for at least 30 minutes, but ideally up to 2 hours. Do you ever crave those soft, chewy, irresistible smelling soft pretzels you get from street vendors or mall kiosks?  If so, you’re in luck!  I have a recipe for Homemade Soft Pretzel Bites that is a perfect replica. These Homemade Pretzel Bites have a perfectly doughy center, crispy crust, and buttery and salty flavor.  They are fun to make and fun to eat.  Great for dipping – the perfect finger food!  A bit of work is required to make these but it’s worth it.  They are SO good right out of the oven.
