St Patrick’s Day is a fun holiday for everyone!  You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants.  Even if you aren’t Irish, it’s fun to participate in the festivities. If you are having a hard time deciding what to make for St Patrick’s Day, I can help!  There are some really great recipes out there whether you are hosting a party or enjoying a quiet meal at home.  I want to share my take on St Patrick’s Day and the menu I plan on serving. I’m sticking with a “green theme” for my menu and serving mostly food that is…green.  The menu is not necessarily traditional Irish food but is fun and festive for the occasion! It’s that time of year and we’ve got a handful of corned beef recipes for you to try out leading up to St. Patrick’s Day, and a few other goodies thrown in as well!   We’ll start things off with this Crock Pot Corned Beef and Cabbage recipe.  This is a pretty simple recipe to do with your crock pot, and can be finished in 4 to 6 hours on high, or 8 to 10 hours on low. Next up is our traditional recipe for Reuben Sandwiches!  For this we just need Pumpernickel Rye Bread, Swiss cheese, corned beef brisket (thinly sliced), sauerkraut, Thousand Island dressing, and butter. What a wonderful time of year!  Time to explore wonderful foods of St. Patrick’s Day that help us usher out the long winter and celebrate the return of spring!  For the suggested menu this week we hope you find some fun items to share with your family and friends that even complement the leftover corned beef!
