Looking for a quick and easy weeknight meal that is also flavorful and delicious?  Look no further!  Meatless Monday has a new fan favorite…. Lentils & Vegetables in Peanut Sauce.  This is a vegan / vegetarian meal that’s packed with fresh vegetables and protein.  I chose some of my favorite veggies to use in this dish, but you can add any veggies you like.  You can add mushrooms, squash, snap peas, you name it! The peanut sauce is what really brings it all together.  It’s bursting with flavor and is rich and creamy.  I think it tasted great when coated on the veggies or when mixes with some white rice.  So good!  And this dish comes together in about 20 minutes. When most people think of cauliflower, they probably don’t get excited.  It’s just another vegetable with a bland flavor…blah blah blah…but it’s so much more!  It’s packed with fiber and B-vitamins, is incredibly versatile, and is one of my favorite vegetables to create meals with. You can create a full meal with one head of cauliflower.  Roast it, put it in soup, make pizza crust or rice, etc.  I however, like to make Chinese inspired dishes with cauliflower.  We did “Chinese Food Week” at our house and created some amazing meals!  You can’t tell the difference in the substitution of vegetable for meat, and the flavors were out of this world. Greek Lemon Rice with Chickpeas is an amazing one-pot dish!  It is full of great Mediterranean flavors and is packed with so many herbs and veggies.  You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees.  Make sure you have a large ovenproof skillet to use.  You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use.  I used a large cast iron skillet, but a Dutch Oven would also work well. We’ve been eating a lot of meatballs at our house lately!  Our idea was to take traditional dishes and turn them into meatballs.  The idea is you get the same great taste but in bite-sized morsels.  The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers!  The fight at our house is no longer “what’s for dinner” but “which are we going to make first” 🙂 Orange Chicken Meatballs are everything you love about a classic takeout meal!  The flavor is incredible – you will think you are eating orange chicken from your favorite Chinese restaurant but with fewer calories and fat.  I like to serve the Orange Chicken Meatballs on top of Cilantro Lime Rice.  You could serve these with rice, noodles, or as is. Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan!  It’s a delicious spin on a classic egg roll.  This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂 The recipe can be found here. Start by heating a large skillet over medium heat.  Add the ground chicken and heat until completely cooked.  You can also substitute ground turkey or ground pork, if preferred. Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet.  Stir to combine and heat slightly. Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house.  It’s easy to make, delicious, and something simple you can make in one pot.  It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook!  Even better, it saves on dishes, so you don’t have to spend too much time on cleanup duty 🙂 The recipe can be found here. Start by chopping the veggies. Then slice the chicken breasts, either into 1-inch pieces or strips.  Place the chicken in a bowl with 1 Tbsp Cajun seasoning and toss to coat. With a little over a week to go, Thanksgiving will be here before we know it.  Are you ready?  I’m in full planning mode.  Making my guest list, creating a menu, finding the perfect table linens, etc.  The most important part of planning in my opinion is the food.  If you plan a menu full of delicious food, yet items that won’t require you to spend the entire day in the kitchen, you can spend that time with family instead.  And what is better than your friends and family gathered at your house, a table full of food, with lots of laughs? I’ve been craving Lemon Chicken for quite some time and finally found the perfect day to make it!  This recipe is a homemade version of the take-out classic that tastes just as good, if not better, then what you would get in a restaurant.  It’s fairly simple to make and delivers a delicious balance between tangy and savory flavors, with crispy chicken and a citrus sauce. Fall will be here before you know it.  The leaves are already starting to change colors, the weather is cooling down, and our appetites are changing from light and refreshing foods to warm and comforting foods.  One of my favorite recipes for fall (or winter, but I’m not ready for those cold temps yet) is Chicken Wild Rice Soup.  The recipe can be found here. This flavorful soup is hearty and delicious, and loaded with fresh vegetables, chicken, and wild rice.  It’s an incredibly satisfying meal on a cool fall day.  Here’s how you make it: Start by making the wild rice according to package instructions.  The rice can then be set aside until you are ready to use. Orange Chicken is sure to be a hit at your dinner table.  The tender chicken is fried crisp and coated in a thick orange sauce.  There is no lack of flavor in this sweet and tangy dish.  It’s one of my favorite Asian dishes and will make you forget about takeout. The recipe can be found here. Start by cubing the chicken into small pieces.  Then add the chicken to the batter and toss to coat.  Let the chicken sit in the batter for about 10 minutes, then toss again.
