Something I love to do from time to time is making homemade bread.  I don’t do it often because it can be time consuming, but nothing beats the taste of a hot, fresh loaf of bread right out of the oven.  I recently purchased the KitchenAid Bread Bowl with Baking Lid which makes creating artisan bread at home quite simple!  It’s essentially one bowl that goes from mixing to rising to baking.  First, I’ll walk through hot to make the homemade bread then I’ll walk you through my favorite recipe to use with the bread. The recipe for the KitchenAid Artisan Bread Loaf can be found here. Start by adding hot water to the KitchenAid Bread Bowl.  Swirl it around then dump it out and dry the bowl.  Secure the bowl on your stand mixer.  Attach the dough hook. Add the flour, yeast, and salt.  Turn the mixer on to … Continue reading

Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger.  You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy.  I like to top the burgers with arugula, but you could substitute lettuce.  I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The recipe can be found here. Start by cooking the bacon according to package instructions.  Transfer to a paper towel lined plate to drain the excess grease and set aside.  The recipe calls for 1 slice of bacon per burger, but you can make more and add as much as you like. In a small bowl, combine the mayonnaise, rosemary, and garlic.  Set aside.  If you are looking for a lighter option, use … Continue reading

A Pimento BLT Sandwich is not your ordinary, run of the mill sandwich.  It’s an elevated BLT because of the Pimento Cheese spread.  If you aren’t familiar with Pimento Cheese, it’s a creamy, cheese, and tangy spread that is often referred to as the pâté of the South.  It’s made with cream cheese, cheddar cheese, pimento peppers (which are sweet and mild), and mayonnaise.  You can adjust the spicy by adding cayenne pepper and other seasonings.  It’s best when homemade but you can usually find a jarred variety at your local grocery store.  It goes well with crackers, vegetables, or spread on a sandwich, which is what we are doing today. BLTs are crisp, fresh, flavorful, and can be a delicious sandwich on their own but I like to add a little something extra to mine.  I always think something is missing so I like to add avocado, egg, or in this case, Pimento Cheese.  It’s a BLTP … Continue reading

Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese.  It’s the ultimate mash-up meal!  And it’s something the kids will absolutely love!  Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread.  Dip it in your favorite marinara sauce before each bite and you will be in heaven. The sandwiches are somewhat customizable too.  Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich. The recipe can be found here. Start by adding 3 Tbsp unsalted butter to a microwave safe bowl.  Microwave for 30 seconds or until melted.  Add the parsley, Italian seasoning, garlic powder, and salt.  Stir to combine and set aside.  If you prefer to use salted butter, simply skip adding any additional salt. Add 1 Tbsp unsalted butter to a skillet or griddle and melt over medium heat. Place the 4 slices of … Continue reading

The ultimate handheld slider sandwiches are Herbed Chicken Parmesan Sliders.  They are made with ground chicken, not traditional breaded chicken, and are perfect for a crowd or when you want a lighter dinner.  Top with melted mozzarella cheese, fresh marinara sauce, and crisp basil, and you have the perfect slider!  I think the sliders taste best on toasted ciabatta rolls (who doesn’t love ciabatta?) but slider buns will also work just fine.  The ciabatta makes the sliders feel more authentic and Italian. The recipe can be found here. My first step is to bake the ciabatta rolls.  I buy bake and serve rolls, so I always get that out of the way before I prep any of the other ingredients.  Then I set them aside to cool while working on the rest of the recipe.  You can skip this step depending on the type of rolls you are using. Next, preheat the oven to 350 degrees F … Continue reading

Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal!  It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice.  You can find it at your local Festival Foods or make a homemade version.  It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick.  The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs.  Pair the Cajun seasoning with some ground chicken, corn, onions, and melted cheese, and you have a delicious sandwich. The recipe can be found here. Start by preheating the oven to 250 degrees F.  This is so you can melt the cheese and toast the buns before assembly. Heat a large skillet over medium heat.  Add the ground chicken and cook to completion, making sure to break … Continue reading

If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. The recipe can be found here. Start by cooking the bacon according to package instructions.  Place on a paper towel lined place to absorb some of the grease and set aside.  Pro tip – if you make extra bacon, you have something to snack on while assembling the sandwiches 😊 Next, preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Slice the jalapenos in half (lengthwise) and remove any seeds.  Fill each piece of jalapeno with cream cheese.  It doesn’t matter if the cream cheese is softened for … Continue reading
