Spring has finally arrived and with the good weather comes lots of outdoor weekend activities and not as much time to cook on the weekends, opening cabins for the summer and yard work leave little time to spend in the kitchen. Burgers are delicious and a simple solution, my favorite is our 1/3 lb. ground beef 85% lean patties, cooked on the grill with a slice of melted cheddar cheese and served on the cheddar onion buns from our bakery. Bubbies bread and butter pickle chips are a staple in our house and add a sweet and crunchy contrast to the burgers. Lucky’s mustards are another condiment that will add extra special touch to your burgers and brats!  What’s not to love about sun-dried tomatoes, chicken, and pasta with a healthy kick of red pepper flakes! This dish comes together quickly with wonderful rich flavor, a perfect evening meal for a busy family. Let’s get cooking. Chicken Pasta with Sun-Dried Tomatoes  Ingredients • 3 large garlic cloves, minced • 1 jar (4 oz.) sun-dried tomatoes in oil • 1 lb. boneless, skinless chicken breasts cut into 1-inch cubes or larger • kosher salt • paprika • 1 cup heavy whipping cream • 1 cup mozzarella cheese, shredded • 1/4 cup freshly grated Parmesan, plus more for serving with the pasta • 8 oz. penne pasta • 1 Tbsp. Any good American holiday, like the Fourth of July revolves around food and our favorite on the center of the plate for summer is the burger! First up is a trifecta of flavors with our Black Angus Premium Choice ground beef, Tickler Cheddar cheese and our own Festival Foods smokehouse bacon. We call it the Tickler Bacon Burger, easy to prepare but mouth-watering, big flavor. The Cheese Sauce can be made the day before, chilled and then reheated and served, making this entertaining-friendly. Tender beef, butter, onions, Lawry’s seasoned salt and fresh French bread, the makings of our Tender Beef and Cheese Sandwich, a hearty sandwich that’s crowd tested and approved. Grab those ingredients and away we go!   Melt 2 Tbsp. of butter in a large skillet and add sliced onions, stir together. Cook over medium-low heat, stirring occasionally, until onions are soft and light brown (about 7-10 minutes). While the onions are cooking, slice the Cube steak, slice against—or perpendicular to—the grain. Season sliced cube steak with Lawry’s seasoning. Be generous as it offers a lot of flavor. The fresh Halibut season has begun in the US and the fillets have been awesome! One of our favorite recipes for Hallibut is Fish Tacos with Chunky Guacamole. This recipe also works well for Shrimp Tacos, use some shredded Spanish Manchego Cheese for a lovely combination with the shrimp. Guacamole is also a healthy snack that takes very little time to prepare, we have Guacamole at our house at least once per week. Guacamole is a lovely side to so many dishes. Another fabulous recipe for Halibut is Roasted Halibut with Red Bell Peppers, ask our butchers to remove the skin on the Halibut for you to save time.
