Pizza for breakfast?  Yes please!  I could, without a doubt, eat pizza for breakfast every day.  I know there is conflicting information out there…is pizza a breakfast food?  Do you eat it hot or cold?  And so on.  This recipe, however, is specifically for BREAKFAST pizza, so you can’t go wrong! The recipe can be found here. The crust is made of hash browns, not a traditional pizza crust.  It gives it a nice crunch while also including a favorite breakfast item in the recipe.  The top is loaded with eggs, cheese, and the veggies of your choice.  You can bake the eggs to meet your taste; bake a little longer for no runny yolk or bake a little less for a runny yolk.  Don’t like bell peppers but love mushrooms?  Skip the peppers and use mushrooms.  Get the idea?  The recipe does list specific ingredients, but you can substitute to meet your needs. Oven Baked Cajun Salmon is a great weeknight meal!  It’s a one pan meal that is easy to assemble and will leave you perfectly satisfied.  The salmon is tender and not too filling, and the veggies are roasted to perfection.  The Cajun seasoning gives off a bold, spicy flavor with a slight earthiness.  It’s an all-purpose seasoning that I use on a regular basis. Looking for a quick and easy weeknight meal that is also flavorful and delicious?  Look no further!  Meatless Monday has a new fan favorite…. Lentils & Vegetables in Peanut Sauce.  This is a vegan / vegetarian meal that’s packed with fresh vegetables and protein.  I chose some of my favorite veggies to use in this dish, but you can add any veggies you like.  You can add mushrooms, squash, snap peas, you name it! The peanut sauce is what really brings it all together.  It’s bursting with flavor and is rich and creamy.  I think it tasted great when coated on the veggies or when mixes with some white rice.  So good!  And this dish comes together in about 20 minutes. Veggie French Bread Pizza is incredibly flavorful and the perfect weeknight meal, especially if you’re in a hurry!  It’s an alternative to traditional pizza and is completely customizable so you can tailor it to meet anyone’s taste preference.  It comes together in about 30 minutes or less. I selected vegetables to use that I knew both Andrew and I would like but use whatever you have on hand or whatever is fresh in your garden.  It’s your creation so it’s up to you! It’s a great time of year to break out the grill and spend more time outdoors enjoying a meal.  Kabobs are a quick and easy meal to make and are very customizable; you can add any meat, vegetable, or seasoning of your choice.  We make kabobs more often than I want to admit because they are so simple! Today I want to share with you 2 recipes for vegetarian/vegan kabobs.  The first is Grilled Jackfruit & Vegetable Kabobs and the second is Grilled Vegetable Kabobs.  Both are packed with tender vegetables, are healthy for you, and incredibly tasty to eat.  Even if you aren’t vegetarian or vegan, you will enjoy these kabobs.  They also make a great side dish for any other grilled meal; pair a vegetable kabob with a juicy hamburger or chicken breast. Ratatouille (pronounced rat-tuh-too-ee) is an incredibly colorful and healthy dish!  Ratatouille is typically a stewed vegetable dish that’s packed with fresh product; anything from tomatoes, eggplant, zucchini, squash, bell pepper, onions, etc.  You can include all of the vegetables listed above or just a few.  Personally, I like to use onion, zucchini, yellow squash, and tomatoes. The recipe can be found here. Preheat the oven to 350 degrees.  Lightly spray a 6×9 baking dish with olive oil spray and set aside.  You can also use an 8×8 baking dish if you don’t have a 6×9 baking dish.  The shape of the pan really doesn’t matter, just pay attention to cooking times because it will vary by a few minutes if you use a larger pan that listed in the recipe. With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty! Lemon Orzo with Roasted Vegetables is not your typical pasta salad.  It’s packed with texture and flavor yet is very light and refreshing.  It works well as a side dish or as a standalone meal.  I think it’s best served warm but room temp or chilled is also fine, it’s all about your preference. The vegetables are delicious when roasted because they are slightly caramelized.  I like to use bell pepper, asparagus, cherry tomatoes, and red onion but you can substitute any veggies you like – eggplant, zucchini, squash, mushrooms, etc.  You can really make this your own by using the veggies you crave. Chicken Gnocchi Soup is the perfect comfort food!  It’s creamy, hearty, and delicious with lots of veggies and chicken in every bite.  This soup is wonderful on a cool night or when you’re looking for something a little more filling. Gnocchi is basically a mini dumpling made from potato and flour.  They are dense, soft, and small in size.  They are yummy in soup and add great texture.  You can typically find gnocchi in the pasta section of the grocery store and sometimes in the freezer section by other frozen pasta. This soup is pretty simple to make.  Start by melting the butter with the olive oil in a large Dutch oven or stock pot. Most Minnesotans are familiar with kabobs because we love to grill when the weather is warm.    However, if you aren’t familiar with kabobs you are in for a treat!  Kabobs are basically cubes of meat, fish, vegetables, fruit, and other foods placed on a skewer and grilled to perfection.  And with the MN State Fair recently ending all I can think of is food on a stick so blogging about kabobs seemed like the perfect fit! I have 4 different kabobs to share with you today.
