With a little over a week to go, Thanksgiving will be here before we know it.  Are you ready?  I’m in full planning mode.  Making my guest list, creating a menu, finding the perfect table linens, etc.  The most important part of planning in my opinion is the food.  If you plan a menu full of delicious food, yet items that won’t require you to spend the entire day in the kitchen, you can spend that time with family instead.  And what is better than your friends and family gathered at your house, a table full of food, with lots of laughs? Fall will be here before you know it.  The leaves are already starting to change colors, the weather is cooling down, and our appetites are changing from light and refreshing foods to warm and comforting foods.  One of my favorite recipes for fall (or winter, but I’m not ready for those cold temps yet) is Chicken Wild Rice Soup.  The recipe can be found here. This flavorful soup is hearty and delicious, and loaded with fresh vegetables, chicken, and wild rice.  It’s an incredibly satisfying meal on a cool fall day.  Here’s how you make it: Start by making the wild rice according to package instructions.  The rice can then be set aside until you are ready to use. Not a cloud in the sky and the temperature is cool and crisp fall weather has arrived albeit much too soon but it is perfect weather to begin cooking soups and stews with fragrant herbs and preparing food for a crowd to watch football. This is a classic Minnesota soup made with wild rice made especially easy if you use Rotisserie chicken from our delis, moist and full of flavor our Rotisserie chickens are useful as an ingredient in many recipes (think chicken quesadillas) as well as a main course. We call our recipe Minnesota Wild Rice Soup it has lovely rich flavor and one of my favorite fall recipes.
