Grilled Thai Shrimp

A great spicy and sweet appetizer for any meal.
|1/3 cup light coconut milk|
|1/4 cup sweetened coconut, flaked|
|1 1/2 teaspoon red curry paste|
|1 tablespoon fish sauce|
|24 shrimp, peeled and deveined|
- In a medium bowl, stir coconut milk, coconut, red curry paste and fish sauce together.
- Add shrimp to bowl, stir, and chill for 1 hour.
- Prepare grill for medium-high heat. Place shrimp on grill rack and cook 2 minutes per side or until done.
- Skewer each shrimp onto a decorative toothpick before serving.
