Kale Pesto Chicken Salad Sandwich

|1/4 cup kale pesto|
|1/2 cup mayonnaise|
|1/4 cup plain Greek yogurt|
|1 cup diced celery|
|12 chicken breasts, seasoned, grilled and chopped|
|1/4 cup red bell peppers, roasted and sliced|
|8 slices Taste Rustic multi grain bread, toasted|
|12 tomato slices|
|1 cup arugula|
- Toast Rustic Multi Grain Bread
- Prepare dressing: combine Kale Pesto, mayonnaise and Greek yogurt to make dressing.
- Combine chicken breast pieces with dressing; keep chilled.
- Build the sandwich: place 2 slices tomatoes on the bottom, place chicken breasts on top then layer equal amounts of celery, arugula, roasted red bell peppers on top of the chicken and top with a slice of toasted bread.
