Bacon Cheeseburger Soup

Serves 4


1 lb lean ground beef
1 cup chopped onion
1 tablespoon fresh minced garlic
1 package dry onion soup mix
1 package real bacon pieces, divided use
1/2 cup flour
4 cups low-sodium chicken broth
1 bottle beer or non-alcoholic beer
1 cup heavy cream
8 oz Velveeta cheese, cubed
2 cups shredded sharp cheddar cheese
1 cup sour cream
Seasoned salt, to taste
Toasted French-fried onions, for topping
1 cup carrots
1 cup celery
Freshly ground pepper, to taste


  1. Preheat a large soup pot or Dutch oven over medium-high heat. Brown ground beef together with onion, carrots, celery, and garlic. Sprinkle with dry onion soup mix and season with a few grinds of fresh black pepper. Stir in real bacon pieces, reserving 2 tablsepoons. Add flour and cook and stir about 2 minutes.
  2. Add chicken broth, beer, and heavy cream; bring to a boil. Reduce heat to simmer; add both cheeses and stir until completely melted. Stir in Sour Cream and season to taste with seasoned salt and freshly ground pepper. Ladle into bowls and top with French-fried onions and reserved bacon bits.
