Stuffed Peppers

Serves 4


Ingredients:

2 lb Our Own Mom's Meatloaf
1 lb Our Own mild Italian sausage
8 oz instant rice, uncooked
4 oz shredded Parmesan cheese
4 green peppers, washed, cut to remove top and seeded (or any colored pepper of your choice)

Directions:

  1. Preheat oven to 350 degrees F. Mix meatloaf, sausage, rice and Parmesan cheese. Fill green peppers with mixture, rounding slightly.
  2. Bake at 350 degrees F. for approximately 1 hour or until internal temperature reaches 165 degrees F.
  3. May be made a day ahead and refrigerated until ready to bake.
