Vanilla Poached Pears

Serves 4


Ingredients:

1 1/2 cups red or white wine
1/3 cup sugar
1/4 cup orange juice
1 clove
1 vanilla bean, cut in half with beans scraped out
2 pears, firm but ripe, peeled & halved with stem

Directions:

  1. In saucepan combine first 5 ingredients, bring to boil, then turn down to simmer. Add pears and cook 12-15 minutes. Remove from heat and pour all contents into heat safe container. Let cool, then cover and refrigerate overnight.
  2. Remove pears and place juice back in saucepan. Reduce sauce by half and remove. Slice each pear leaving stem intact. Fan out on each plate. Spoon sauce over each and serve!
