Croques Monsieur with Cheddar

Ingredients:
8 slices sourdough bread
8 slices Canadian Bacon
1/2 lb Australian cheddar, cut in 8 thin slices with small chunk left for shredding
2 eggs
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 cup water
4 tablespoons butter, divided
Directions:
Preheat oven to broil.
Place 2 slices bacon and 2 slices cheese on 4 slices bread. Place the remaining bread slices on top.
In bowl, combine eggs, water, salt, baking powder and beat well. Dip each sandwich in egg mixture.
Place ovenproof skillet on medium heat with 1 tablespoon butter (per sandwich). Fry both sides until golden brown. Then place on baking sheet, sprinkle tops with remaining shredded cheddar and broil until cheese on top is golden. Serve with mustard, preserves, or just as is!
