Cranberry Horseradish Sauce

Serves 2 cups
|2 tablespoons olive oil|
|1/2 cup diced red onion|
|1 cup dried cranberries|
|1/2 cup cranberry juice|
|1/2 cup champagne vinegar|
|2 tablespoons horseradish|
|2 tablespoons honey|
|1/4 cup olive oil, plus 1 tablespoon|
|Salt, to taste|
|Pepper, to taste|
|Fresh chopped herbs such as Italian parsley, tarragon or chives, optional|
- Heat 2 tablespoons olive oil in small saucepan on medium-high heat. Add onion and cook 2 minutes. Then add cranberries and juice, bring to a boil, and simmer 15 minutes. Remove and add to food processor. Blend until semi-smooth.
- Place in mixing bowl and add vinegar, honey, 1/4 cup and 1 tablespoon olive oil, horseradish, salt & pepper. Mix well, season to taste and finish with fresh chopped parsley, tarragon or chives.
