Cranberry Horseradish Sauce

Serves 2 cups


Ingredients:

2 tablespoons olive oil
1/2 cup diced red onion
1 cup dried cranberries
1/2 cup cranberry juice
1/2 cup champagne vinegar
2 tablespoons horseradish
2 tablespoons honey
1/4 cup olive oil, plus 1 tablespoon
Salt, to taste
Pepper, to taste
Fresh chopped herbs such as Italian parsley, tarragon or chives, optional

Directions:

  1. Heat 2 tablespoons olive oil in small saucepan on medium-high heat. Add onion and cook 2 minutes. Then add cranberries and juice, bring to a boil, and simmer 15 minutes. Remove and add to food processor. Blend until semi-smooth.
  2. Place in mixing bowl and add vinegar, honey, 1/4 cup and 1 tablespoon olive oil, horseradish, salt & pepper. Mix well, season to taste and finish with fresh chopped parsley, tarragon or chives.
