|1 cup basmati rice|
|2 tablespoons oil|
|1 tablespoon Urban Accents Thai Garden Spice Mix|
|1 cup chicken broth|
|1 cup coconut milk|
|1 teaspoon salt|
|1 tablespoon fine minced lemongrass|
- In sauce pan, heat oil on high heat, add raw rice and saute 1 minute. Add broth, milk and salt. Bring to boil, turn down to simmer and cover part way. Simmer for 15-20 minutes, turn off heat and let sit covered for 10 more minutes. Add lemongrass, fluff with a fork, and serve.
