Cranberry Salsa*

Serves 3 cups


Ingredients:

1 bag fresh cranberries, (12 oz.)
1/4 cup orange juice
1/2 cup sugar
2 teaspoons minced garlic, (2 large cloves)
1 medium onion, chopped
1 medium bell pepper, seeded and chopped
1/3 cup fresh lime juice
2 fresh jalapeno peppers, stems and seeds removed, finely diced
1/4 cup fresh cilantro, chopped
Sea salt
Freshly ground pepper

Directions:

  1. Place cranberries, orange juice, and sugar in medium saucepan and bring to a boil over high heat. Reduce heat and simmer 5 to 10 minutes or until cranberries are popped. Remove from heat and cool.
  2. Pour cooled cranberry mixture into blender or food processor. Add remaining ingredients and pulse a few times until mixed well but still a little chunky.
  3. Season, to taste, with salt and pepper and serve with tortilla chips.
