Serves 3 cups
|1 bag fresh cranberries, (12 oz.)|
|1/4 cup orange juice|
|1/2 cup sugar|
|2 teaspoons minced garlic, (2 large cloves)|
|1 medium onion, chopped|
|1 medium bell pepper, seeded and chopped|
|1/3 cup fresh lime juice|
|2 fresh jalapeno peppers, stems and seeds removed, finely diced|
|1/4 cup fresh cilantro, chopped|
|Freshly ground pepper|
- Place cranberries, orange juice, and sugar in medium saucepan and bring to a boil over high heat. Reduce heat and simmer 5 to 10 minutes or until cranberries are popped. Remove from heat and cool.
- Pour cooled cranberry mixture into blender or food processor. Add remaining ingredients and pulse a few times until mixed well but still a little chunky.
- Season, to taste, with salt and pepper and serve with tortilla chips.
