Chicken Tacos with Chipotle Chiles and Vinegar Slaw

Serves 4

An upgrade to the traditional chicken taco.


2 cups shredded rotisserie chicken breast
1 tablespoon chipotle chiles in adobo sauce
3 tablespoons chopped fresh cilantro
1/2 teaspoon minced garlic
2 tablespoons sour cream
2 tablespoons fresh lime juice
1/4 teaspoons sea salt
1/4 teaspoon ground black pepper
1 cup packaged slaw mix
2 radishes, thinly sliced
1 tablespoon seasoned rice vinegar
8 taco shells
1/2 cup prepared salsa verde


  1. Place chicken, chiles, 2 tablespoons of the cilantro, garlic, sour cream, lime juice, salt and black pepper in a bowl; gently stir to combine.
  2. Place slaw mix, radishes, remaining 1 tablespoon cilantro and vinegar in a separate bowl; stir to combine.
  3. Evenly divide chicken and slaw amongst taco shells and serve with salsa.
