Toss first six ingredients together in bowl. Preheat 10-inch nonstick skillet over medium-high heat. Add about 1 Tbsp. of butter and 1 Tbsp. of olive oil, heat until hot and foamy. Spread hash browns out evenly over bottom of pan and cook about 10 minutes or until golden brown.
Invert dinner plate over skillet and flip over onto plate. Add more butter and olive oil and slide uncooked side into the hot skillet. Cook another 10 minutes or so until golden brown.
