Ham Carbonara

Serves 4


1 package Angel Hair Pasta, (16 oz.)
1 medium Onion, thinly sliced
1/3 cup Vegetable Oil
1 cup Fully Cooked Ham, (Leftover Ham is Great!), cubed
1/2 cup Chicken Broth, (Low Sodium)
1/4 cup meltedmargarine or butter
2 Egg yolks, beaten
1/2 cup Fresh Parsley, minced
1/2 cup Parmesan Cheese, grated


  1. Cook the pasta as directed on the package.
  2. While pasta is cooking, in a skillet saute the onion in oil. Add the ham, broth and margarine and heat through.
  3. Add the cooked and drained pasta to ham mixture.
  4. Pour in egg yolks and cook until the eggs are completely set. Sprinkle with Parsley and Parmesan Cheese and toss to coat.
