Pesto Arugula Turkey Burger

Serves 4


1 Lb Ground Turkey
1/4 Cup Sun Dried Tomatoes in Oil, drained and chopped
1/4 Cup Shredded Parmesan Cheese
2 Garlic Cloves, minced
1 Tsp Salt
1/2 Tsp Pepper
4 Slices Fresh Mozzarella
4 Hamburger Buns
Pesto, homemade or store-bought
Baby Arugula


  1. In a medium bowl, mix together the ground turkey (or ground chicken), sun dried tomatoes, parmesan cheese, garlic, salt, and pepper. Form into 4 equal sized patties.
  2. Heat a skillet over medium heat. Cook burgers for 5-6 minutes on each side.
  3. During the last minute of cooking, top each burger with a slice of mozzarella.
  4. Slice hamburger buns. Spread a thin layer of pesto on the bottom half. Place a handful of arugula on top,then place the burger on top of the arugula. Spread more pesto on the top half of the bun, and place on top of the burger.
