Chicken or Turkey Lettuce Wraps

Serves 6


Ingredients:

1 lb ground turkey or chicken
1 large onion, finely chopped
Salt
Freshly ground pepper
2 teaspoon minced fresh garlic
1 tablespoon grated fresh ginger
1 bunch scallions (green onions), sliced thinly
1 cup Asian Peanut Sauce, plus more for topping
1 can diced water chestnuts, (8 oz.)drained
1/4 cup chopped peanuts
10 outer lettuce leaves, rinsed and dried, for serving
Crispy Wonton Strips, for topping
2 tablespoons soy sauce

Directions:

  1. Preheat a large nonstick skillet over medium-high heat. Add ground turkey or chicken, onion, and sprinkle with salt and pepper.
  2. Cook until turkey is no longer pink, breaking up pieces with large spoon. Stir in soy sauce, garlic and ginger and cook 2 minutes longer.
  3. Stir in prepared Asian peanut sauce and heat through, about 3 minutes.
  4. Stir in scallions, water chestnuts, and peanuts and cook until just heated through, about 2 minutes more.
  5. Serve spoonfuls of turkey mixture in lettuce leaves. Top with more peanut sauce and crunchy wonton strips, if desired.
