Ingredients:
| Olive Oil |
| 1 Yellow Onion, finely chopped |
| 1 Green Bell Pepper, seeded and finely chopped |
| 2 Celery Ribs, finely chopped |
| 1 Heaping Tbsp Tomato Paste |
| 1 1/2 lbs Ground Beef |
| 3 Tbsp Chili Powder |
| 2 Tsp Ground Cumin |
| 1 Tsp Garlic Powder |
| Salt & Pepper, to taste |
| 28 oz Can Crushed Tomatoes |
| 15 oz Can Kidney Beans, undrained |
| 15 oz Can Pinto Beans, undrained |
| Shredded Cheddar Cheese, for serving |
| Crackers, for serving |
Directions:
- Heat oil in a large pot over medium heat. Add the onion, pepper, and celery and cook until soft and translucent, about 5 minutes.
- Add the tomato paste and stir to combine. Cook for about 1 minute.
- Add the ground beef and cook, breaking apart as it cooks, until cooked through. Optional – drain the excess grease.
- Add the chili powder, cumin, and garlic powder and generously season with salt and pepper. Stir to combine.
- Add the can of crushed tomatoes then fill the can about halfway with water and pour into the pot.
- Add both cans of beans (including the liquid from the cans) and stir to combine.
- Bring to a boil then reduce to simmer and let cook for 40 minutes, stirring occasionally.
- To serve, ladle into bowls and garnish with shredded cheese and add a few crackers on the side for dipping. Enjoy!
